Cottage Cheese pancakes! Yum!

I was having a craving for pancakes. Normally I would just make a tiny batch have one and call it a day but they actually make me feel bad. They are just too heavy and of course don't stay with you too long.

I saw a Pinterest recipe for cottage cheese pancakes. There was someone talking about how light and fluffy they are and let's face it LOVE cottage cheese!

I made them for lunch today and I swear I went to heaven! I had sugar free Syrup and 1/4 slice of a banana sliced on top. I also added 1/4 t cinnamon knowing I was slicing a banana. The cinnamon made them even more delicious.

Cottage cheese Pancakes

1cup cottage cheese (I used 1percent)

3 eggs

2T canola oil

1/3 cup flour

Best the 3 eggs in a small bowl and set aside. In a med. bowl add cottage cheese, oil and flour and mix well. If you want to add cinnamon now is the time. Once combined, add egg and mix until well combined.

Heat griddle and spray with cooking spray or use butter. I made smaller cakes. I cooked them very slowly until one side was browned. You do have to be careful when you flip them as the melted cottage cheese likes to stick to your spatula. I sprayed my spatula with cooking spray before turning them.

They seem a tiny bit troublesome but my goodness they are delicious. I could only eat one and a half. Next time I will cut the recipe in half.

By the way, my tummy feels great! They are light, fluffy, eggy and cheesy but they work!

and you can have them with Walden Farms Syrup. No carbs.

you can add 1/2 a tablespoon of coconut flour if you want them to fluff a little.

I know I could substitue the white flour with almond flour... I order a great almond flour (very fine) from Nuts.com.... but am going to try these in the morning....

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.
