Easter Mushy Ideas

I am almost 3 Weeks out and am able to eat almost everything I've tried, but I'm trying to stick to mostly mushy food for awhile longer. Does anyone have an idea for a soft side dish I could take to Easter? Potatoes are already being done.

Oh, yeah, the ricotta bake is awesome!! Non WLS people adore it as well. It tastes just like lasagna without all the carbs. I need to make some of that in the next few days! :)

I just made this for the first time with the recipe from the egg face website. Can't wait to try it!

If you do a brunch you could do a crust less quiche. Very simple and easy to get down.
