One of my favorites was a simple poached egg. There's a variety of seasonings if you need any, that will give an astonishing variety to the simple poached egg. I developed a taste for the microed egg with a splash of vinegar in the Water cup. There's some mid-eastern herbs that add a world of flavor with 0 calories. Later phase, tiniest kernel of butter and I was pretty much satisfied for hours. Low fat elk sausage, just a 1/2 oz chopped up fine with an egg poured in to the 4" cast Iron skillet, slow cooked, turned out on a plate with a few drops of tobasco.....yi!! great for the morning labors. probably not for those recently on solid foods though.

I've found that putting scrambled eggs and meat, veggies and cheese all together in a freezer bag and cooking them in a pot of boiling Water makes them just right for me. I was having a hard time with eggs too and read a post about doing this several years ago and have been able to enjoy eggs ever since!!

Also.. I have an easy crustless quiche recipe.. it makes a 13X9 pan.. and the ingredients are easily changed to whatever you like.. this is just the stuff I like in it =)

12 eggs, scrambled

3 oz. diced ham

1 med. onion, diced

1 can mushrooms, pieces and stems

1 Tomato, diced

1 green pepper, diced

1 8 oz. bag cheddar cheese, divided

1/2 cup light sour cream

Preheat oven to 350 degrees. Mix all ingredients in a large bowl, saving half of the cheese. Spray pan with cooking spray and pour the mixture in and top with remaining cheese. Bake 30 minutes, or until not jiggly in the center. Let sit for 5 minutes and cut into 12 servings. Enjoy!

just ate some delicious pancakes! They are super easy and yummy!!

I used 4 egg whites and 1/4c of oatmeal. Blend these together (I did it in magic bullet) and added some frozen mixed berries and a dash of cinnamon.

You could add 1 packet of splenda or truvia to sweeten it up a little.

They are thin and cook up fast, but are so good! I sprayed with some I Can't Believe It's Not Butter spray and 2 tbsp of sugarfree Syrup.< /p>

Egg beaters OR extra firm tofu and morningstar farms veggie sausage and random veggies (whatever I have on hand). I make it at night, and pop it in the microwave when I get to work in the morning. The egg beaters and sausage=140 calories, so the rest of the cals just depend on what veggies to add.

a packet of low carb maple&brown sugar oatmeal mixed with 1/2 c cottage cheese-it probably sounds gross, but if you like cottage cheese, you'll like it.

EAS soy Protein shake-1 scoop mixed with 4-6 oz soy or almond milk and 8-10 oz Water (makes it last longer without adding extra calories)

Dannon Light&Fit or Yoplait Light yogurt mixed w/about 1/2-1 cup of Kashi Go Lean Crunch

Sometimes on weekends, I will make a huge batch of healthy pancakes and freeze them, topped with sugar-free Syrup, smart balance light, and slivered almonds.

This is the recipe I use, except I sub whole wheat flour, agave instead of sugar, and vanilla almond milk. I also add a tsp of vanilla and a dash of cinnamon. Seriously the best, fluffiest pancakes ever! I use a 1/4 c measuring cup to put the batter on the skillet, which I feel is the perfect size for me.

OMG, this sounds super delicious. Can't wait to try this quiche when i get on solids. lol about to graduate to the mushies tomorrow. I can't wait.

Legal "company" quiche (skinnied down Chili cheese Puff):

2 1/2 C egg beaters

1/2 C flour

16 oz. fat free cottage cheese

1/2 C Can't Believe It's Not Butter (liquid)

8 oz reduced fat grated cheese

8 oz fat free grated cheese

7 oz died gree chilis

1 tsp baking powder

1/2 tsp salf

Preheat oven to 350 degrees. Pam a 9x11 pan. Mix all ingredients together except the chilis. Once all mixed, add the chilis and blend. Pour into the pan. Bake for 45 min, or until golden brown.

Cut into 12 pieces (healthy sized portions!), each piece equals 142 calories per piece, and 18 grams protein!

Company loves it as much as when I make it with "real" cheeses, etc.

I freeze the pieces in individual baggies, and defrost one the night before as I want one. Good for you poor folks still working!

I'm not sure if this helps...but I read that it's best to forget "Breakfast, lunch and dinner" as to what you can eat at those times and just call it all meal time. So eat eggs for dinner, eat chicken for breakfast...etc. If you want something quick, try boca burgers, I heat them up in Water in the microwave for 3 minutes (I'm in pureed stage so I have to have them extra moist) they're also good just heated in the microwave for 2 minutes in a wet paper towel for extra moisture. Forget breakfast....eat whatever you want for MEAL time :P

Anyone have any suggestions for Breakfast ideas that are high in protien and are low in starch? I know eggs are high in protien, but I actually have a little bit of a hard time getting eggs down. So I am trying to find some things to eat for breakfast that are good for you and keep you full. My dietician tells us to eat 4 hours apart and absolutely no snacking in between. Which sometimes when I have oatmeal (starch), or a protien shake or yogurt for breakfast, I am really hungry within 2 hours. I don't have fill yet, but I am trying to eat better and need some ideas if you have any! I am hoping that once I start getting my fills, that a yogurt or protien shake will fill me up for longer! I hope this is the case anyway!

      Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
      I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!
