Food - Keeping it interesting!

Ok, so my pre Op plan allows for free grazing on low carb veggies, salad items etc, and one serve of healthy fat per day.
So rather than munch on celery orcarrot sticks (which I do also love) I thought why not make them into a faux wrap with Lettuce and avo.

I only ate one with broth for lunch, but wow it was great!

Anyone else getting a bit creative with their diet?

    So tonight I put my chicken breast and veggies in a skillet with tex mex style spices and home made green tomato salsa, bit of guac and Greek yoghurt. 297 cals 740 cals for the day.

    So a quick lean curry tonight veggies, chicken and konjac 'rice' - used my healthy fats ration to add a tablespoon (for 3 portions) of almond butter to thicken and make it creamy. It's not bad!

    Take Away, grilled spicy chicken, no rice, no beans, no corn chips, salad and a spoon of guac. Yummy

Veggo meal

Konjac noodle stir fry, made the sauce with a bit of tamarin paste, so it's giving Pad Thai vibes!

6 days Post surgery update!

Feeling great! ? no problems tolerating fluids *touch wood* I have had some delicious home made soup which I strained, red lentil and veggies made on home made bone broth is delicious!

I had prepped a large amount of bone broth and soups for Post surgery, but we had a Natural Disaster level storm through, which took out our power for 3 days!!!!!!!!! Lost everything, so have had to make more.

Tonight I thought I would try Thai flavours and a bit of spice to see how my tummy reacts. Had a few sips whilst making it, and no dramas!

Red curry soup with powdered peanut butter and coconut milk. 141 cals for small bowl. Taking it very slowly in case my tummy rebels.

Yuck. Power outages are the pits. Your soup looks Delicious though. Glad you seem to be healing well and took the opportunity to make something else to try.

Yes, the power outage was dreadful, we have never had power out for more than a few hours before, we managed fine, it's Summer here so no need for heating, and we managed to amuse ourselves - the food was the worse part!

Not only did we lose all my Bari prepped food, but I have been food prepping for the others in the family too ... so much lost food.

Our power company offer $250 compensation, it won't cover it all, but will help a bit.

Makes you appreciate how dependent we are on our power!!

so tonight I am just having tomato soup, with protein powder and beef stock powder, it's quite nice!?

I haven't had store bought tomato soup since I was a kid and it was a Sunday night special with bread and or crackers l?

125ml serve = 49 cals ? ?

I have been having some pain like trapped wind when liquid hits my stomach the last few days, I think I have been eating too quickly ?

Still on fluids for a few more days, counting down til Thursday!

Yesterday we went for a two hour drive to see some friends, had lunch out with them, there was pizza, hot chips with gravy, hubby had fish and chips on the table it didn'tworry me at all the others eating their yummy lunches! Luckily they had a clear wanton soup dish, so I had that and hubster got the wontons ?

Today I made a darker version at home with added protein powder and fibre ☺️

Deeeeeelish!!
