What ya eating tonight?

I had a small sweet potato, with a tablespoon of i cant believe its butter,

And i boiled a boneless skinless chicken breast. With salt and pepper, curry, garlic powder and some soul food seasoning. After it cooked i put a tablespoon of BBQ sauce to the side so the bites of chicken wouldnt be to dry,

All was good, filled up quick even tho i was slow eating

What fish do you use? And do you make it like clam chowder but w/fish?

I made sugar free apple crisp, too! I topped it w/chopped pecans. It was so gloomy today - a good day to run the oven and fill up the house w/delicious smells. I'm not brave enough to try it (probably too sweet for me) but my hubby and daughter love it! :-)

Oh, and how do you make pumpkin chili? It sounds interesting...

Can I get a recipe on that? I think you've mentioned it before and it sounds fantastic!!!

Fish chowder:

1/4 medium onion chopped

1 1/2 tbsp of butter

2 small red potatoes cut into chunks

1/2lb of cod,haddock,scrod (any white fish will work)

Salt/pepper

1 tbsp of Thyme

Bay leaf

1 5oz can of 2% evaporated milk

1 1/2 cups of milk (I use 1% but skim works too)

1 8oz bottle of clam juice

Sweat onions in butter until translucent. Add potatoes and clam juice. Add water if needed until potatoes are covered. Add thyme, bay leaf, salt and pepper. Let summer covered for about 10min. Lay fish on top and cover again. Cook for another 10min. Add evaporated milk and regular milk and simmer for about another 5-10 min. Stir gently so you don't break the fish up too much. Season with salt/pepper to taste. Enjoy!!

I have to mention this is always better the next day. And I get about 4-5 my size servings out if it. If your cooking it for your family I would maybe double the recipe except for the clam juice.

I loveeeee hotdogs, it was my favorite food! What kind do you eat? I saw someone use a wrap with the hotdog and all the fixins! I like sauerkraut and mustard, so it might work!

No I don't. Sorry. I don't count anything I just make good healthy choices. That's per my doctor's instructions, which I'm very happy with! :-). It's working. I'm sure you could figure out the nutrition using a food logging program.

Shamefully I like the hot dogs that are a mix of beef & pork. I eat them in wraps too. Hot dogs sit very well in my pouch.

Had 3 inches of a pepperoni sub from Sheetz... Admittedly, not the best thing I could have chosen.. I've been craving one like crazy so I broke down when I had to stop and put air in my tire after school. I ended up getting an extra work out in after dinner out if guilt though. Hahaha
