You can replace banana with 1/2 cup pumpkin. Makes muffin or pancake.

Well if you can substitute pumpkin for banana, hmmm how about left-over sweet potato or leftover winter squash pulp? I like nuking sweet potatoes like you do.Idaho white potatoes, split them open and a teeny bit margarine or butter. Used to sprinkle brown sugar on there too, but if you get good quality ones you don't need the sugar.
