Broccoli & Cheddar Soup

I finally found the recipe I was looking for a few days ago!

Ingredients

3 lbs fresh broccoli, chopped with stems discarded

1 Tbsp extra virgin olive oil

1/2 tsp black pepper

1 tsp garlic powder

2 cups fat- free milk

1/2 cup reduced – fat cheddar cheese, cubed

Method of Preparation

1. Place broccoli, extra virgin olive oil, black pepper, and garlic powder in 4-quart or larger slow cooker and add enough Water* to cover.

2. Cover and cook on high for 1 – 2 hours.

3. Add milk and continue to cook for 15 minutes

4. Finally, stir in cheese and continue cooking until cheese is melted.

* To add more flavor, try using a store bought low-sodium chicken broth.< /em>

Makes 6 servings

Nutritional Information Calories 190, Protein 14 grams, total fat 7 grams, carbohydrates 20 grams, dietary Fiber 6 grams, sugars 8 grams, sodium 280 milligrams

Would this Soup be something that someone could have post-op on the full liquids stage if after the broccoli was cooked and before the cheese was added, you put it all in the blend and chopped up the broccoli and then added the cheese? I will be sleeved two weeks from today and am just trying to get some ideas so i don't get bored!

Double check with your doctor and./or dietitian, but I think as long as it is blended to a smooth consistency, it would be okay.

That sounds very yummy, I bet my husband would love it, too.

I just had it for dinner and it was really good. Next time, I'll probably remove some of the broth before I add in the milk and then blend up a portion of it before I add in the cheese. It is a little thin when prepared as written, but still very tasty!

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞
