Squash Casserole

Made this tonight, found it on the All recipes site (great resource) It was lovely and I served it with grilled swordfish that was yummy too:

Squash Casserole

Try this squash casserole,

Saute a yellow squash and onion for 5 minutes until partially done.

Crush a half sleeve of butter crackers take one half add one half cup colby or chedder cheese one egg and a half cup milk.

Mix the egg, crackers and cheese together.

Fold in the partially cooked squash and onion.

Put in a shallow baking dish and top with the remaining crackers.

Put a couple of dollops of butter on top.

Bake at 400 degrees for 25 minutes. Enjoy

Summer squash is one of my favorite vegetables. My favorite way to prepare it is to slice it lengthwise or in rounds. I put the slices on a pizza pan and spray the squash with a little non-stick cooking oil and broil it in the oven 8 -10 minutes on each side, till it's nice and blackened.
