Brown sugar muffin recipe

You'll need:

- 2 cups ricotta cheese

- 4 large eggs

- 2 teaspoons vanilla extract

- 6 teaspoons Splenda brown sugar (or to taste)

- cupcake papers

Baking instructions:

~ Set oven to 400 degrees

~ Mix all ingredients together until it resembles pancake batter

~ spray cupcake papers with Pam

~ In a cupcake pan, fill 12 cupcake papers to the top

~ bake for 35 minutes

YOU'RE WELCOME. Trust me.

Ps - the bottoms will be moist - it's unavoidable but still delicious.

I added more of the brown sugar than the recipe called for but here's the breakdown I got. It's a pleasant change.

72 calories, 3g carbs, 3g fat, 5g protein, 60mg sodium and 3g sugar per serving. The recipe makes 12 servings=12 muffins. It would be nice if it had more protein but for a sweet craving I think it's better than a lot of other things I'd like to grab for!

Thought this deserved a bump... Made today and put a tsp of sugar free strawberry jelly on top... So good!!!!!

I just bought a healthy comfort food cookbook the other day at a yard sale and it said if the bottoms of muffins are wet, add ground flax meal or oat bran to the recipe. Just like 2 tbsp. plus the flax will add more Protein.

Just made this. So yummy!!!!
