Brown sugar muffin recipe

You'll need:

- 2 cups ricotta cheese

- 4 large eggs

- 2 teaspoons vanilla extract

- 6 teaspoons Splenda brown sugar (or to taste)

- cupcake papers

Baking instructions:

~ Set oven to 400 degrees

~ Mix all ingredients together until it resembles pancake batter

~ spray cupcake papers with Pam

~ In a cupcake pan, fill 12 cupcake papers to the top

~ bake for 35 minutes

Ps - the bottoms will be moist - it's unavoidable but still delicious.

Did you guys use low fat or light ricotta or the regular? I'm going to go buy the stuff tomorrow! I'm excited to try!

I used low fat, The last time I made them I added cinnamin. Yummy

One more question! Is it the Splenda brown sugar blend? I can't find a Splenda that just says brown sugar

Ok great! I just made mine! They were all fluffy until I took them out of the oven and they sunk in the middle! Hopefully that's what's supposed to happen! I'm trying making homemade kale chips tonight too!

Just made em, madly in love, having to beat my son down to keep him out :). Very much custardy....I do love custard!!! I tried kale chips once....not so much my thing. Hope you like em!!!!

Any idea how long these will keep in the fridge? I did let the 8 year old have one for dessert....he's in love. Says they taste like French toast without the bread.
