What ya eating tonight?

I'm still on soft so I use my small casserole dishes and my ramikins and measure out fat free Beans. Then I spoon a good amount of pureed mild salsa on them and bake them until they get crispy around the edges. Then I pull them out and put 75% less fat sharp cheddar *that surprisingly melts!* and when they cool and I put them in the fridge.....sigh. I slap a piece of velveeta on the top. :) so when I microwave them...they taste like bean rotel dip!

That sounds yummy!!! I have been taking two bites of talapia every 4 hours. Lol! It is good too. I am just wanting to get to the next stage.

Tilapia sits heavy in my pouch, but I've been eating it a lot. I dipped last night in egg whites and then coated them in Parmesan and Italian bread crumbs. Then I covered it in fat free tarter sauce. Sigh, it still tasted like fish though. I'm so not a fan of fish. I wish I were though.

I had a small piece of grilled lemon pepper trout, some baby lima Beans and a little cottage cheese.< /p>

Had a scrambled egg, with a little shredded cheese. I added a bit of juice from my husbands fresh pico de gallo. Not sure the egg is sitting well right now, but sure was tasty! It is sooo weird being full on one little egg!

Fresh asparagus from the farmer's market and grilled salmon. Yum!

That's what I'm having for dinner tonight. Can't wait!

For lunch I had some split pea Soup, pureed with some Greek yogurt. Was very good and filling!

I just found a Morning Star Turkey Burger Pattie with avocado in it in the freezer section. 23gm Protein and hardly any fat or carbs. Gonna try it.

I found these awesome parents choice toddler things. Cheddar cheese little munchers baked whole grain snack. I dipped them in hummus. 18 of them have 30 calories and 5 grams of carbs. They just kinda dissolve...but super crunchy. So it gave me that crunchy chip/cracker hummus experience. It's pretty awesome. Don't know if they're the best choice, but they certainly aren't bad.

Went out for dinner last night and was able to order cheesy cauliflower Soup and a side of smashed potatoes. I ate the cup of soup, no problem but the potatoes were just too heavy. I was excited they had such a good soup to order!! Tonight I'm having my fat free broccoli cheese soup. Yummy!!

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
