What ya eating tonight?

I steamed a little fish with salt, pepper and butter in the microwave and had it with a few rotini from the Pasta salad my husband made for the rest of the family and some steamed green peas and a few spoonfuls of sugar free pudding for dessert. I had a rough time with fish last week so I was nervous to try again but the butter and a little tartar sauce, it was not too dry this time and I had no problems.

I pan fried some ground chicken with green Beans and a little bacon. It smelled so good but I used frozen green beans I had for a while in the fridge and they tasted old. Had about 1/2 a cup total. I thought I'd use the rest for lunch but gave it to the dogs instead. They loved it!

I've been making a creamy pumpkin Soup, pumpkin, onion and sweet potato, baked and then puréed in vege stock, add some nutmeg, just a pinch and then add a can of light evaporated milk. If low on Protein For the day I add a scoop of vanilla Protein Powder, which also adds to creaminess. I make enough to freeze in meal portions, really enjoying it. If I get a cold, I bake in some garlic bulbs. Yummy hope you all like it.

You can add silky tofu as well to boost the protein. No added taste But helps the creaminess

Tried to do about a 2 oz. crab cake but it did not agree with me and came right back up. Might try something later tonight.

When did you have your surgery? They have bread crumbs in them. Some people like me have problems with bread products.

I found a recipe for crab cakes that has no bread crumbs.. Only crab, egg, a little fat free mayo and spices and its wonderful!

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
