Cauliflower Pizza

Cauliflower Pizza Crust

Makes 4 individual pizzas or 1 large one

2 eggs

2 cups mozzarella cheese

2 cups riced cauliflower ( great the cauliflower with a cheese grater)

2 cloves garic minced

1/4 cup basil fresh or what ever herbs you like

pizza toppings

1 cup marinara sauce. (1/4 cup per pizza)

1-2 cups mozzarella cheese

And what ever veggies or meat you want

Preheat oven to 450 degrees

Line a cookie sheet with parchment paper spray with non- stick spray

In a medium bowl combine riced cauliflower,basil or your herbs,eggs,mozzarella. Divide into 4 equal amounts and press evenly on the parchment paper

Bake crust at 450 degrees for 12-15 minutes

Remove cookie sheet from oven and add

Pizza toppings

Place back in oven till cheese is melted about 5-10 minutes.

As we tell out kids steam is a hint that it may be hot ENJOY

It's not bad and taste just like pizza we made 1 large pizza for the whole family but you may want to do small ones that's up to you don't know how well they will freeze will be trying that with the leftovers tonight

You won't eat a whole pizza but here are the nutritional stuff per 4 individual pizzas 310 calories, 13 carbs and 31 g of Protein total fat 16g

What is "riced cauliflower?"

I am over a month post op. This wes delicious but my pouch didnt like the egg or cauliflower yet. It was too soon and i felt like i was digesting a rock. Tasted so good tho.

I also make cauliflower mash potatoes :) less carbs! This pizza sounds amazing too!

Try mixing in a little garlic and sour cream makes mashed cauliflower even better

I forgot to mention that its alot easier if u have a food processer. Put in the heads only no stems. A tiny bit of Water. Then pulse until it looks like rice. Lay on a cheese cloth and squeeze as much water as possible out then follow the recipe. it helps to have it dry cuz then ur crust sticks together better with the cheese and egg.

I only had my surgery on nov 2, I'm still on liquids how far out do you think I can have cauliflower pizza?

Cauliflower MAsh sounds good too,,,

I start full liquids Friday, than progress to puréed the week after

I would check with dr. Mind moved me through each stage. I would think 6 weeks.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!
