Tres Leches Cake

Low fat low sugar

Tres leches ("three milks"), a cake drenched in sweet, milky Syrup and topped with meringue, has nearly overtaken flan as a favorite dessert in Latino restaurants. We lightened the traditional recipe by about 245 calories a serving by using lower-fat versions of the milks that give the cake its name.

Cake:

Cooking spray

1 tablespoon all-purpose flour

1/4 teaspoon salt

4 large egg whites

2/3 cup Splenda for baking

1 teaspoon vanilla extract

3 large eggs

2/3 cup all-purpose flour

Milk Mixture:

1 cup half-and-half (fat free)

1 (14-ounce) can fat-free sweetened condensed milk

1 (12-ounce) can fat-free evaporated milk

Meringue:

3 large egg whites

1 cup Splenda for baking

1/3 cup Water

1 teaspoon lemon rind

1 teaspoon vanilla extract

Preheat oven to 350°.

To prepare cake, coat a 13 x 9-inch baking dish with cooking spray; dust with 1 tablespoon flour.

Place salt and 4 egg whites in a large bowl; beat with a mixer at high speed until soft peaks form. Gradually add 2/3 cup sugar, 1 tablespoon at a time, beating until stiff peaks form. Place 1 teaspoon vanilla and eggs in a large bowl; beat until thick and pale (about 3 minutes). Gently fold egg white mixture into egg mixture. Lightly spoon 2/3 cup flour into dry measuring cups; level with a knife. Gently fold flour into egg mixture. Spoon batter into prepared dish. Bake at 350° for 20 minutes or until cake springs back when touched lightly in center. Cool 5 minutes in pan on a wire rack.

To prepare the milk mixture, combine the half-and-half, condensed milk, and evaporated milk. Pierce the entire top of cake with a fork, and pour the milk mixture over the cake.

To prepare meringue, beat 3 egg whites with a mixer at high speed until foamy. Combine 1 cup sugar and 1/3 cup Water in a saucepan; bring to a boil. Cook, without stirring, until candy thermometer registers 238°. Pour hot sugar syrup in a thin stream over egg whites, beating at high speed. Stir in rind and 1 teaspoon vanilla. Spread over cake.

I found this in a magazine and instead of sugar use Splenda for baking .

I'm Mexican too. I don't have a problem staying away from tortillas but chips are another story. I crave hot sauce all the time & go crazy. Definitely a trigger food.< /p>

Yup! My hubby and I make chicken and cheese at home. I don't eat the tortilla. As for hot sauce- I love chips and salsa! I purchased some chips at trader joes. 6 grams of Protein for seven chips. They r soy and flax seed. I get my Fiber and my Omega 3s while enjoying a not so good snack. I should switch to veggies altogether, but I love chips and salsa. :)

Nina...you will have them back...but it's gonna take some time...I promise you there are so many things you will still enjoy.

I can eat spicy food but Ill pay for it later. I don't want to sound like a broken record. Once you lose a lot of weight and are within 50 pounds of your goal you will not care. I love food and love to cook. To be honest with you eating is different. You can't eat a lot and you don't enjoy it the same. TOTALLY worth it. I know there was a time when i felt so bad about being fat. I would have done anything to get these types of results. Oh yeah I mexican too.

Me too! I am praying that I can still tolerate spicy food. After doing research and seeing a lot of people not being able to, I'm not gonna lie, it made me sad lol

I'm not a big fan of menudo, the meat is kinda tough, so you'd have to hew forever.

Well i am so glad for everyone post, i have had some of the same questions . Well what i miss is home made tacos because i can not eat tortillas, sopes. Or pan dulce. Well i am 6 months out and i am stuck at the same weight , also i miss my margaritas.

      On day 4 of the 2 week liquid pre-op diet. Surgery scheduled for June 11th.
      Soooo I am coming to a realization
      of something and I'm not sure what to do about it. For years the only thing I've enjoyed is eating. We rarely do anything or go anywhere and if we do it always includes food. Family comes over? Big family dinner! Go camping? Food! Take a short ride or trip? Food! Holiday? Food! Go out of town for a Dr appointment? Food! When we go to a new town we don't look for any attractions, we look for restaurants we haven't been to. Heck, I look forward to getting off work because that means it's almost supper time. Now that I'm drinking these pre-op shakes for breakfast, lunch, and supper I have nothing to look forward to.  And once I have surgery on June 11th it'll be more of the same shakes. Even after pureed stage, soft food stage, and finally regular food stage, it's going to be a drastic change for the rest of my life. I'm giving up the one thing that really brings me joy. Eating. How do you cope with that? What do you do to fill that void? Wow. Now I'm sad.

        Life as a big person had limited my life to what I knew I could manage to do each day. That was eat. I hadn't anything else to look forward to. So my eating choices were the best I could dream up. I planned the cooking in managable lots in my head and filled my day with and around it.

        Now I have a whole new big, bigger, biggest, best days ever. I am out there with those skinny people doing stuff i could never have dreamt of. Food is now an after thought. It doesn't consume my day. I still enjoy the good home cooked food but I eat smaller portions. I leave food on my plate when I am full. I can no longer hear my mother's voice saying eat it all up, ther are starving children in Africa who would want that!

        I still cook for family feasts, I love cooking. I still do holidays but I have changed from the All inclusive drinking and eating everything everyday kind to Self catering accommodation. This gives me the choice of cooking or eating out as I choose. I rarely drink anymore as I usually travel alone now and I feel I need to keep aware of my surroundings.

        I don't know at what point my life expanded, was it when I lost 100 pounds? Was it when I left my walking stick at home ? Was it when I said yes to an outing instead of finding an excuse to stay home ? i look back at my last five years and wonder how loosing weight has made such a difference. Be ready to amaze yourself.

        BTW, the liquid diet sucks, one more day and you are over the worst. You can do it.

      Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!
