Quick breakfast Ideas Please

Hello there everyone. I am in need of some quick healthy edible Breakfast foods. I have just started my new job and I am in training so eating in the class room is allowed. I get up early very early but it just seems that I can not get my one cup of coffee in and then have time to eat at home before I leave.

I am trying to eat at the same times daily and since I have to wait 3 full months for my next fill (my choice) because my job has a NO TOLERACE for being absent and I simply can not miss work. I am doing really well down 25lb and I have had 1 fill already. So I am just looking for input on some fast yummy good for me food that I can eat in the mornings.

Do you like quiche? I made this last Sunday and cut it into 8 portions. Each day I take one to work and reheat it when I get hungry and its so good. I did modify the recipe to my liking by using 4 real eggs and didn't use the low fat offerings. Also I don't care for broccoli or mushrooms and just used 3 cups cut up fresh spinach.

Crustless Spinach Quiche

Ingredients:

  • 3 ounces reduced-fat cream cheese, softened
  • 1 cup fat-free milk
  • 1 cup egg substitute
  • 1/4 teaspoon pepper
  • 3 cups (12 ounces) shredded reduced-fat cheddar cheese
  • 3 cups frozen chopped spinach, thawed and squeezed dry
  • 1 cup frozen chopped broccoli, thawed and well drained
  • 1 small onion, finely chopped
  • 5 fresh mushrooms, sliced

Directions:

In a small bowl, beat cream cheese. Add the milk, egg substitute and pepper; beat until smooth. Stir in remaining ingredients.

Transfer to a 10-in. quiche pan coated with cooking spray. Bake at 350° for 45-50 minutes or until a knife inserted near the center comes out clean. Yield: 8 servings.

Hi:

I don't cook much so I like to have the following for breakfast:

yogurt with fruit mixed in

yogurt with granola mixed in

applesauce with fruit mixed in

Cereal bar

half an english muffin with Peanut Butter

home made Cereal mix with raisins and nuts (like chex mix)

four saltines with cheese

It doesn't get much simpler than this. :ohmy:

I also make little quiches in cupcake pans. I use whatever I have on hand and it's a great way to get rid of eggs that are close to the due date. The variations are endless, but here is one I make often:

1 lb. bulk sausage (prefer Bob Evans)

3/4 pkg. of turkey pepperoni (I don't like to measure)

Minced onion

Garlic pepper

broth, if needed (I usually add about 1/2 cup so make sure I have enough liquid for the minced onions, usually use chicken broth)

1 dozen eggs

1+ Tbsp. chives

1/2 tsp paprika

Approx. 4 cups of shredded assorted cheeses (swiss, mozzarella, co-jack, mexican, parmesan) sometimes I use cottage cheese in place of a cup to lessen the fat content, or low-fat cream cheese)

1 can Cresent rolls (8 servings)

Brown sausage with minced onion and garlic pepper and broth if needed. Add pepperoni about 1/2 way through browning. Drain and set aside.

Unroll Crescent rolls, do not split. Press any seams together and roll out or press with fingers to thin. Spray cupcake pan with Pam cooking spray. Cut into 24 pcs and place into the bottom of each well in cupcake pan.

In separate bowl, lightly beat 12 eggs with a fork. Add chives, paprika and assorted cheeses. Mixture should be thick, slightly paste like. May be more runny if using cottage cheese.

Fill each cupcake well with approx. 1 Tbsp of the meat mixture until all wells are full. Then fill each cupcake well with the egg/cheese mixture until all is used.

Bake at 350 degree for about 20-25 minutes or until slightly brown on top. Let cool about 15 minutes in pan and before taking out and placing on wire rack to completely cool.

These can be put into freezer bags and then you just nuke them about about 1 1/2 minutes to re-heat. Makes 24 mini-quiches.

p.s. You can do many variations, i.e. cubed chicken with mexican cheeses/japapeno peppers/hot sauce with a side of salsa, use hamburger, turkey, crab meat, shrimp. It's really a great basic recipe. My husband grabs a couple for Breakfast each morning too so they don't last that long, but for a quick breakfast, it's too easy.

I do this sometimes (although Im not a big breakfast eater):

I just spray the inside of a cup (usually a throw away) with non-stick spray (butter flavored) and pour 1/4 cup of egg beaters in and then microwave until its cooked. Sometimes I throw some low fat cheese in there or I dip it in thai peanut sauce (I dip everything in peanut sauce...I'm a big peanut sauce person). This way you can have eggs but you can take it with you on the go. Its fast and the clean up isn't messy.

You can also make a Protein shake. I make mine in the magic bullet and its a very quick process. And if you do make them in the bullet or something like it, you can use one of the cups with a handle and just bring it with you.

I really struggle with eating in the morning as I'm so tight....but I have been eating a piece of "Laughing Cow baybel light cheese. It's the one in the white - It's great for breakfast or an on the go snack. 50 calories and 6 grams of Protein.

I don't have time to eat breakfast at home in the morning so I usually bring a Protein Shake to work with me.

I read this post and immediately got up to make this! I used ham instead of sausage :sneaky:. I cannot wait to try it. I typically like breakfast for dinner. I am going to freeze them for when I can eat mushies. I just had surgery last Friday. I feel fantastic. Receipe ideas like this one make me very excited that I got banded. I get to learn to eat and cook in a whole new way. Thank you so much for your inspirational receipe.

I have my largest meal at breakfast, middle of day is medium and hardly anything at night- So my "breakfast" variates depending on my mood...

Often I will make eggs with ham and cheese or

Quaker oatmeal bar with a cup of Decaf coffee

Oatmeal

Grits

2 peices of string cheese

I also make a ham and cheese wrap and cut it into sushi like size bites and munch in the morning.....

oops... forgot to say that what i listed is individual stuff not all together... it is either/or... didnt want ya'll to think weird thoughts.... :wink:

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.
