Food Before and After Photos

Made mini meatloafs with ground chuck (more moist) oatmeal, carrots, shallots and garlic for little lettuce sandwiches thru the week. Tricolor Quinoa salad made with fresh mint slivers, white kidney Beans, dates, tomatoes, cucumbers, garlic + shallots in light olive oil and wine vinegar. Really makes a nice high Protein salad or side. Building up my protein intake for vein ablation this Thursday on left leg. Super foods for healing! Ate entire portion. ;]

Yay! My salad partner in crime. Tonight's dinner. I think you might have enjoyed this rather esoteric salad mix (felt adventurous) with white grape wheels, honey glazed walnuts, currants, mini cucumbers, sage baked turkey breast, hard boiled egg, Cotija cheese sprinkled with crispy onion garnish. Dressing is a creamy corn + ranch blend.

dinner last night : Greek salad and novelty sized mushroom ricotta bake 🤣

(I barely ate any because I began fasting again (in anticipation of Yom Kippur) and I'm not as hungry and can handle less)

Ooh! That smoked trout looks good!!😋 I don't think that's something I've ever seen here in the US, but I loooove smoked herrings and whitefish!

Love this salad! What does Cotija cheese taste like? I've seen it a few times on this thread and finally found it in a local grocery store, but did not have the courage to buy it.

It looks really good. I like feta but hate cottage cheese(texture), is it close to any of them?

I oven roasted my veggies first as I like the roasted flavor and the resulting dryness after a good roast. I used three cups of the cooked veggies. I also skipped the herbs because I did not have any fresh and could not decide what would go best with my combo. Otherwise, I followed the recipe linked above. Hubby used pieces to make burritos and was very happy.

I like it but don’t buy it often. I think it tastes like a fresher version of feta. It’s more bright and less briny tasting. Used a lot for street corn and street tacos. Mmm

Breakfast was cottage cheese with tomatoes, banana peppers, and kimchi

lunch was lightlife Italian sausage. They were good but a little spicier than I thought they’d be. Ended up eating another couple slices later on.

snack was supposed to be a take on kimbap but I think I’ll try again with something other than yogurt because it made it weird for me. My kids ended up eating all but one of the pieces.

(Dipping sauce was a mixture of garlic chili sauce, soy sauce, a smidge of honey, sesame oil and oyster sauce.)

dinner was microwave Protein cheesecake with berries mixed in. I’m saving the other half for breakfast as it’s 2 servings for the recipe.

I followed this recipe using fat free cream cheese and accidentally added a whole scoop of Protein Powder so added 2 Tbsp of skim milk. I also added the vanilla and a smidge of lemon crystal light along with a 1/4 cup frozen berries.

I eat plantains, cassava, Beans, lentils, barley & sometimes oats (but I always have) I, however, never heard about the term resistant starch... so thanks for the info!

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?
