Love me some eggplant parm...I can eat almost anything! And way too much!

Omg I love eggplant Parmesan ! But I can't have anything with carbs. I think it does... I don't know. Does it?? If not I'm all over that:)

Don't bread the egg plant...can you not have carbs at all? Make your own sauce or get organic sugar free sauce and you should be gold. I would lightly sear the eggplant in olive oil before baking....very little oil...it absorbs it.

h the dreaded pureed stage...My mainstay was chicken salad:

1 can fat free chicken breast

1 scant Tls. olive oil mayo

1/2 c. plain fat free greek yougurt

1/2/t. dill weed.

1/4 t. celery seed

pepper to taste

Puree and enjoy!

Add fat free chicken broth if you need to puree easier.

P.S. I now add grapes Stringed, minced celery, and chopped walnuts and feed it my whole family for lunch...I add a touch of rice wine vinegar for acidity. Of course it's not pureed.

Add fat free chicken broth if you need to puree easier.

My pouch tolerated spicy foods really well so I pureed salsa into everything for flavor. Also try baked ricotta:

Ricotta cheese

sugar free spaghetti sauce

Top with fat free mozzarella and Parmesan and baked until bubbly.

Eggocado

Pit an avocado

slice small portion off bottom so avocado will lie flat

Mix two eggs with 1/8 c. skim milk

add 2 Tbls. salsa, 1/8 c. low fat cheddar cheese, ground cumin to taste

Add egg mixture to hollowed out avocados ( You may have to scoop out some avocado flesh so it all fits)

Top with sprinkles of low fat cheddar

bake at 350 for 16-18 minutes until set

YUM

Trying this one as soon as I'm feeling better.

I use firm tofu. You take it out of the liquid it comes in and slice off a chunk. Pat it dry with a towel. Put a tiny bit of oil in a pan on medium high. add one minced clove of garlic to the oil. Wait about 30 seconds then put the tofu in the pan. Pour a tsp of soy sauce on top of it. Let it cook on each side for two minutes. That's it! Super easy and fast.

I tried tofu once years ago and didn't like it - so bland. I'll have to give it another try. How much Protein does it have?

4oz of tofu has about 100 calories and 10g of protein.

I love Titus...especially fried and in hot garlic sauce....loo. I guess I'll have to find an alternative to that one!

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

        I may have to have gall bladder surgery during my weight loss surgery. Not thrilled about it either but do not want 2 recovery times. Just want it over with.

        Thanks for your post. I may need to rethink my decision... :(
