Great ideas! Want to try a couple but my doc said no acidic tomato products for 3 months. Baked ricotta has to wait darn it.

That sounds delish !

I'M INTO MY 4TH WEEK AND I'VE EATEN STUFFED TOMATOES AND STUFFED ZUCCHINI. AS LONG AS ITS SOFT AND YOU CHEW ANY PIECES IT SHOULD BE FINE ACCORDING TO MY DR. I EVEN ASKED MY DOCTOR IF I COULD ADD SOME BRUCHETTA IN WITH MY EGG. HE SAID FINE. I DON'T KNOW IF THATS A GOOD OR BAD THING, BUT MY STOMACH HASN'T REJECTED ANYTHING AS LONG AS I CHEW WELL AND EAT SLOWLY.

Yum, can't wait until next week to try it! Thanks for sharing.
