All Protein Meatloaf

This sounds perfect for me! I wanted something with the taste of red meat but the nutrional value of white meat. Can I ask what site you order from?

Using bison will bring the Fat and Sat. Fat down, way down. My husband had a stent put in his heart a year ago this month and we switched to ordering, GRASSFED, bison. I order it on line, and it's delivered to our house. His nutritionist said the fat and sat. fat content are like that of boneless, skinless chicken breast or fish...NOT RED MEAT!! Yay!! I've bought 'red meat' (beef) maybe five times in the past year. MY cholesterol dropped from 168 to 145 and the biggest change is cutting out red meat. I don't use real butter except at a restaurant now, but I didn't use a lot before....red meat was the biggie. I am not on meds, I have naturally low cholesterol.....grassfed bison is a big deal, and we love it!!! I use it and find myself using less when making spaghetti and other things like that, a half lb instead of a full lb. Anyway, that's my two cent worth!! :confused1:

Any idea on how long to cook this in a slow cooker? Can it be cooked in a slow cooker? I have to leave the house for a bit tomorrow and hubby will be home but I planned to make meatloaf in the slow cooker tomorrow and I would like to try this recipe. I am just starting to use the slow cooker I have had for about a year (my first one) so I am still learning how to use it.

Cook on low for about 5 hours. I wouldn't add any sauce to the top of it until the last hour or so because the intense heat build up will make the sauce too runny.

At the 4 hour mark, slice the meatloaf in half and check the doneness. Ground meat can cook faster in a crock pot but I would say from my other recipes, I usually do 4-5 hours on low for ground meats.

Thanks, I ended up making this today! It was yummy!! AND juicy!!!! Took longer for *my* oven (for some reason I didn't get a notification that I had a reply) to cook it but it was worth the wait!

How does bison taste? I am kind of a "meat snob" (not a big fan of ALOT of meat products) so while I am curious I am not sure about it at the same time. Does it taste anything like a more mainstream meat that I might have tried b4 (like hamburger for example)?

How does bison taste? I am kind of a "meat snob" (not a big fan of ALOT of meat products) so while I am curious I am not sure about it at the same time. Does it taste anything like a more mainstream meat that I might have tried b4 (like hamburger for example)?

It is "sweeter" than beef, and not as gamey as venison. I'm a meat snob as well, okay well during my losing phase I ate what I could and that included lots of ground beef and turkey.

It's an extremely lean meat so seasoning, in my opinion, is the key to bison/buffalo meat.

I personally do not think it tastes like hamburger meat at all.

Based on the feedback here, I ordered some bison meat and am waiting for it to be delivered now. I've never had it before. Just wondering what seasoning goes best with bison? Of course I'll try it plain, but plain gets boring so quickly... LOL

I season it just like I do with beef. We like salt, pepper and McCormick's 'hot shot' (black pepper and cayenne) on the burgers, maybe liquid smoke. I cook the roast in a couple of cans of cream of mushroom or golden mushroom Soup. We like to do the steaks outside on the grill; i use extra virgin olive oil, fresh ground pepper, sea salt and the minced garlic (in a jar) to season it. Mix all of the above and put the steak in it. Spoon it over the steak, turn it over and do it....just make sure it's on all sides. This is delish!! Do NOT overcook, it is very lean and will get dry!

Oh good lord! Bison is NOT for penny pinchers! Yeesh, $8.00 a pound :unsure: I think I will stick with chicken and beef lol.

Oh yeah, it's not cheap by any stretch of the imagination LOL. It is a special thing for me.

I love that I have friends who hunt, and we get venison every year for free.

I like venison and DH is itching to go hunting hehe. If its cooked right its got an ever so subtle hint of game flavor (its kinda like frog legs for me...ppl tell me they taste like chicken and I say if I want something that tastes like chicken I will eat chicken lol... so I don't like when ALL the gamey flavor is removed, just most of it, just enough flavor left to seperate if from something like beef) but I learned the hard way that you HAVE to know how to cook it or its gonna turn out bad...very bad... regurgitation inducing bad. Well... I haven't the foggiest on how to cook it :lol: Never tried and scared to have DH go out and kill a poor deer and then not even be able to eat it. :( That's why DH hasn't been "allowed" to go hunting. Its one thing to kill an animal for food, quite another to kill it for sport and right now since I don't know how to cook it it would end up being for sport and not food.

I would love to learn how to make deer jerky! I loved it when I was younger and it would make a nice Protein rich snack... (can you eat Jerky once your tummy has healed completely post-op?? I hear alot of ppl say there tummy doesn't set well with meats like that) but I don't know how to do that either :(

And, I eat sh*tpots of jerky and have since hitting regular foods. Red meat actually works better for my sleeve than chicken.

Thanks :) That's informative! But help me out please? DH isn't here to explain... what is the "rack" and why would he be worried about it?

DH has never hunted, that I know of, but he wants to go out with his brother and learn. WE bought him a gun last year and then I backed out of it because I don't know how to cook the meat. So he has been like a kid with a dollar in his pocket since lol. Deer season is during the winter months right? If, so its not far off and maybe he can bag a couple of them so we can really stock up so it might last at least half the year. I just gotta figure out where the heck to hang the deer to bleed it....(you do have to bleed it,right? that is what I have always heard is that you have to bleed it or it will be too gamey) Our community office would have a stroke if we hung it out in our yard (its kinda silly that we had more freedom when renting than we do now that we are buying, but I imagine it would attract rodents anyway). I will have to talk to my BIL and see where he bleeds his... maybe he won't mind sharing his spot :unsure:

Oh and what on earth do you do with the parts you can't use? Can you like send it somewhere to be used for dog food or something?

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!
