Low Carb Pizza Recipe

I am not doing low carb right now, but I thought this would be nice for those that are. I made this a while back and it's really good. I was skeptical, but it really is pretty amazing.

Ingredients:

For the crust: For the pizza:

  • 1 (8 oz.) package of full fat cream cheese (room temp.)
  • 2 eggs
  • Freshly ground black pepper
  • Garlic powder
  • 1/4 cup grated parmesan cheese

  • 1/2 cup jarred marinara sauce*
  • A pinch of cayenne pepper
  • 1/2 teaspoon oregano
  • 1 cup shredded mozzarella cheese, or more if desired
  • Sauteed pepperoni
  • Garlic powder

*Finding a sauce that doesn’t contain added sugar is not easy, but I did find a “no sugar added” by Ragu that with a few added seasonings tastes fantastic on the pizza. You could always make your own too but I’m not THAT brave yet.

Directions:

For the crust: For the pizza:

  • Preheat oven to 350.
  • Butter a 9×13 baking dish
  • Blend cream cheese and eggs and season with pepper & garlic powder
  • Add parmesan cheese and stir until combined
  • Pour into buttered baking dish
  • Bake for 20 minutes or until golden brown (this step is important. Make sure it cooks until golden brown so that it doesn't turn out too soft.)
  • Let crust cool for 15 minutes before adding toppings

  • After crust is cooked, raise oven to 400 degrees
  • Mix together marinara sauce, garlic powder, cayenne pepper & oregano
  • Top crust with marinara and spread evenly
  • Top with mozzarella cheese
  • Add toppings
  • Bake for 8 minutes or until cheese is bubbly

This pizza really surprised me. I made mine with ground beef as topping, but you can use any topping you like. My husband even liked it....and he is super picky!!

The crust is not crisp like traditional pizza. Make sure you cook it til the top is golden brown and let it cool the full 15 minutes before adding the toppings and that will help.

Another really good "pizza" is made with a portobella mushroom cap instead of a crust. It may sound gross but it is delicious and very satisfying.

Yeah! This sounds great! I also heard of crust made from cauliflower … I'll see if I can find the recipe online. A friends of mine tried it and he said it was awesome!

I always find it interesting how anyone can even eat any pizza at all. Low carb, fake crust, whatever.

Just goes to show how different people's journey to success can be.

Cauliflower crust.....now THAT does sound interesting, lol. I would give it a try though. I am always looking for new ways to make pizza :)

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.
