Miss French Fries??? Try this!

Okay... I'm 7 months post-op and I can tolerate ANY kind of potato... except for french fries. Now I'm not big on them, but sometimes they just sound good.

Someone told me the other day to bake my green Beans. Well... I love green Beans. I typically boil or steam them lightly (because they have to be super crunchy still!). But the thought of putting them in the oven kind of freaked me out. But the woman said they'd be amazing, so I braved it.

They were great! I can't eat a ton of them and I just cook for myself so I snapped and washed 10 beans and put them in a ziploc bag. Put a tiny bit of extra-virgin olive oil in along with a bit of salt and pepper and shook them around until they were well coated.

Then they went in the oven to bake at 400 for about 30 minutes (flip them 1/2 way through). Mine started getting pretty dark, but I was told to let them look "burnt". They came out a little sweet, salty and crunchy. Man they were good! It was a nice change of pace for me and really solved my french fry craving while still being good for me.

Anyway, if you're looking for something like that, give the beans a try. I doubt you'll be disappointed.

I do a version of this with sweet potato "sticks". 3-4 of them are a nice addition to a meal. I lightly spray them with olive oil and shake a combo of Splenda and cinnamon on them.:cursing:

In the bulk section of my health food store there is a bin with crispy veggies. It's a mix but has dried, crispy, zucinni, green Beans, carrots, sweet potato, and a couple other things I can't identify. they are a nice snack and a pleasant healthy change.

We have french fried green Beans in the restaurants all over our town. Try dipping them in some ff ranch dressing. You won't miss potatoes at all........

addelapp I tried these tonight and they were delicious! My 14 year old who hates veggies loved them.

I tried the green Beans last night...they were great! :thumbup: I will have to try the sweet potato next. Thanks for the great ideas.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

        I may have to have gall bladder surgery during my weight loss surgery. Not thrilled about it either but do not want 2 recovery times. Just want it over with.
