Taco salad recipe-can someone help

I read a recipe awhile back for making taco salad with refried beans, sour cream, etc. I am 2 week post-op, and am looking for some good food ideas. Do any of you know the ingredients and how it was prepared. It sounded really good. Thanks!

This does sound good, hopefully someone will remember the recipe and post it. I am week post op and anything that is not liquified sounds good. LOL

I am not sure of the recipe you are thinking of...but I know when I am on purrees, I make this:

1/2 can of fat free refriend Beans

1/4 cup taco sauce (not salsa--too chunky)

1/4 cup low fat cheddar

Microwave until hot and cheese is melted.

After that , I add a tablespoon or so of low fat sour cream.

It is very flavorful and satisfying. Most of the time I am not able to eat all this, but just refriderate the leftovers.

Thanks so much, I am still doing shakes, cream Soups, etc. I am ready for something alittle more tasty. Sounds delish!

Thanks!

If anyone has a different recipe, Please post it too. Thanks
