Cooking with pea protein milk?

I can not tolerate milk anymore. My surgery isn’t until October. My NUT suggested soy milk and Bolthouse farms pea protein unsweetened milk. I have them both and would like to know about cooking with them. My husband isn’t a milk drinker but I do cook him food that requires milk. It would just go to waste after I used the small amount needed for his food.

Have any of you cooked with the soy or pea protein milk? If so how did it turn out?
