My birthday was last month and due to scheduling we celebrated tonight. I had the best dinner I’ve had in a while. The bread is simply wood fired pizza dough with olive oil and rosemary, the salad is a blackened shrimp with Calabrian Chiles, pine nuts and a lemon vinaigrette.

Followed that up with a trip to my favorite chocolate shop. I had a raspberry and a dulce de leche truffle.

Every bite was worth the calories today.

K, I know I wasn't asked, but am going to but in here and share my veggie (mushroom) mao pao recipe with you anyway. Mr & the Kid (and I) love it.

Including a pic I posted of it on my Instagram from last time I made it. This bowl (with the rice) was for the fam, I had mine with....SALAD.

Ingredients
- [ ] 1/2 cup vegetable broth
- [ ] 1 tablespoon maple Syrup (OR liquid Sweetener)
- [ ] 2 teaspoons reduced-sodium soy sauce (OR Braggs Liquid Soy Aminos)
- [ ] 1 teaspoon cornstarch (OR Xanthan Gum)
- [ ] 1 tablespoon peanut oil
- [ ] 1 cup shiitake mushrooms, sliced
- [ ] 3 tablespoons fermented black Beans, roughly chopped
- [ ] 2 green onions, white parts only, chopped
- [ ] 6 cloves garlic, minced
- [ ] 1 tablespoon fresh ginger, minced
- [ ] 1 teaspoon Sichuan peppercorns
- [ ] 2 tablespoons chili bean paste (aka Doubanjiang)
- [ ] 1 (14 ounce) container silken tofu, cut into 1-inch cubes
- [ ] 1 tablespoon chili oil
- [ ] 1 tablespoon sesame oil
- [ ] 3 tablespoons peanuts, chopped
- [ ] 1 tablespoon sesame seeds

Directions

1. Mix vegetable broth, maple syrup, soy sauce, and cornstarch in a bowl.
2. Heat peanut oil in a wok over medium-high heat. Add mushrooms, black beans, green onions, garlic, ginger, and Sichuan peppercorns. Sauté until aromatic, about 1 minute. Add chilli bean paste and the soy sauce mixture. Cook and stir until thick, 3 to 5 minutes.
3. Add tofu; cook until heated through, about 1 minute more.
4. Transfer cooked tofu to a serving dish; drizzle chilli oil and sesame oil on top. Top with chopped peanuts & sesame seeds

Ok, you guys got me jonesing for asian. And I'm literally out of all fresh veggies right now until I can get my ass to the store to shop a big shop. Ugh. So I made the equivalent of "stone soup" with lc fried rice. And remember, almost no ACTUALLY AUTHENTIC asian ingredients were harmed in the making of this dish. LOL.

This is for one serving (the macros). I will post the pic of the dish with recipe over in the Meal Prep thread to give some love to it. It makes 4 servings of 1 cup each + fried egg if you make one. You don't need to top it with an egg, I just did to up the Protein for the meal a bit. But you could also add more egg whites, or tofu, or more chicken/shrimp to up the protein as well.

This is for 1 cup of fried rice with an egg cooked with just a spritz of olive oil spray.

Totals: 184 calories; 18g protein; 8g fat; 7g carbs; 2g fiber; 5g net carbs (plus I had a cup of the broth that I used to steep the shrimp before hand with a couple of drops of sesame oil and Sriracha but those tallies aren't in here.)

hahahhahha...

This looks reeeeaaaaaalllly good.

I have yet to find shiratake rice in person in any of the groceries I've been to. I may have to resort to ordering online :(

This is where I get them. They often have BOGO specials on them. :) I love the Vitacost brand of them. And love the vitacost brand of Peanut Butter Slim too.

Special shout out to @FluffyChix who gave me some ideas on what to do with all my Protein Powder.

I give you: chocolate Protein powder Microwave Mug Cake w/ whipped cream

This cake is surprisingly filling! I ate it too fast I guess and realized this too late. Oopsies. I ate less than 1/2 and was done. The Kid had a couple bites of it too to taste, and even though she is not a fan of chocolate cake, she said she "woudn't spit it out". High praise from a dessert connoisseur. LOLOLzz

Next time I will use almond flour instead of coconut flour, as it was a tiny bit too coconut-y tasting to me. Also, it is sooooo much better when it is warm and right out of the microwave. Once it gets to room temp it becomes kinda meh.

348 cals - 34g protein - 12g NET carbs - 15g fat
** if you use sugar-free chocolate chips and lose the whipped cream, you can save yourself 100 cals and 7g Net carbs total.

      Iʻm roughly 6 weeks post-op this morning and have begun to feel like a normal human, with a normal human body again. I started introducing solid foods and pill forms of medications/supplements a couple of weeks ago and it's really amazing to eat meals with my family again, despite the fact that my portions are so much smaller than theirs. 
      I live on the island of Oʻahu and spend a lot of time in the water- for exercise, for play,  and for spiritual & mental health. The day I had my month out appointment with my surgeon, I packed all my gear in my truck, anticipating his permission to get back in the ocean. The minute I walked out of that hospital I drove straight to the shore and got in that water. Hallelujah! My appointment was at 10 am. I didn't get home until after 5 pm. 
      I'm down 31 pounds since the day of surgery and 47 since my pre-op diet began, with that typical week long stall occurring at three weeks. I'm really starting to see some changes lately- some of my clothing is too big, some fits again. The most drastic changes I notice however are in my face. I've also noticed my endurance and flexibility increasing. I was really starting to be held up physically, and I'm so grateful that I'm seeing that turn around in such short order. 
      My general disposition lately is hopeful and motivated. The only thing that bugs me on a daily basis still is the way those supplements make my house smell. So stink! But I just bought a smell proof bag online that other people use to put their pot in. My house doesn't stink anymore.

      Oh yeah, something I wanted to rant about, a billing dispute that cropped up 3 months ago.
      Surgery was in August of 2023. A bill shows up for over $7,000 in January. WTF? I asks myself. I know that I jumped through all of the insurance hoops and verified this and triple checked that, as did the surgeon's office. All was set, and I paid all of the known costs before surgery.
      A looong story short, is that an assistant surgeon that was in the process of accepting money from my insurance company touched me while I was under anesthesia. That is what the bill was for. But hey, guess what? Some federal legislation was enacted last year to help patients out when they cannot consent to being touched by someone out of their insurance network. These types of bills fall under something called, "surprise billing," and you don't have to put up with it.

      I had to make a lot of phone calls to both the surgeon's office and the insurance company and explain my rights and what the maximum out of pocket costs were that I could be liable for. Also had to remind them that it isn't my place to be taking care of all of this and that I was going to escalate things if they could not play nice with one another.
      Quick ending is that I don't have to pay that $7,000+. Advocate, advocate, advocate for yourself no matter how long it takes and learn more about this law if you are ever hit with a surprise bill.

      Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
      I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL
