More chicken tenders!

I absolutely need to finish everything in my house before I buy anything new.

Anyone else realizing they have way more food than they thought even though there’s “nothing to eat” ?

Ive turned into the leftovers-eater. The fam is adverse to leftovers and i hate waste, so….

Theres always something to eat, but not always of the healthy-persuasion. But i count calories and try to make sure im within range, so its all good.

Yummers! Most of my salads don’t have lettuce in them but I like them both ways, with and without!

Man I’m going through the pics of everyone’s goodies. All looks so good. Inspired me to take a pic of the dinner my husband made tonight. They are all having pizza tonight so he made this special for me (since I really don’t do pizza)and my parents who like both

Asparagus
Yellow squash
Butternut squash
It was SUPER YUMMY!!

I have chicken tenders regularly with salad for lunch. Cook them in the airfryer & freeze in individual bags for when I want them.

I spent two weeks eating out of my freezer recently. Decided I needed to eat some of leftovers I freeze because my freezer was full & there ‘s still heaps of meals left in there. It’s like the Magic pudding of freezers (classic Aust children’s literature reference). Also been cleaning out my pantry again - a shelf every week. So much stuff to toss again with expired use by dates. A result of the buying in bulk habits from the last couple of years. Did keep the soya bean Pasta I bought last year even though it didn’t work. I’ll give it another try one day (before it expires 😉).

Wanted to share my bariatric friendly birthday cake. I did a lil photoshoot with the leftover slices. I'm so proud of the cake. You literally can't tell there's only 2 net carbs per serving. Made with almond flour and a bit of coconut flour. I used swerve to sweeten it. It has eggs and butter of course and vanilla Beans. I got lazy and bought a sugar free store bought frosting. I ordered Keto Sprinkles online. Prior to surgery I was an avid baker and I'm a home chef so I wanted to challenge myself with this. It LITERALLY tasted like regular cake. My friends were so impressed. I sent the rest home with my friend who's husband is doing Low carb. I could only manage a couple bites on one slice but didn't make me sick or get stuck on anything and my nutritionist approved! glad I can still Celebrate birthdays with cake and friends sans overeating sugary treats. This looks AMAZING! When you have time please please please give us the recipe and instructions. I’ve tried for a long time but could never get the almond and coconut flour cakes to work.

Pro tip: once you have the batter together if it's chunky or not incorporated at all, put on a pair of food gloves and break it up manually with your hands so it's completely soft and pureed. I find it makes for a better crumb. I used vanilla bean paste and fresh vanilla Beans instead of extract too. Flavor is much better.

(my attempt was not successful…overcooked and turned out basically like mashed potatoes wrapped hard (and chewy? 🤷🏻‍♀️) skin #oopsies. Will try again another time!)

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!
