Oooh banana pancakes

These are my absolute favorite. My husband makes them a few times a week.

2 eggs 1 large banana (or 1 1/2 small)

That's it

Whisk eggs mush in banana then whisk, til it looks like pancake batter. Cook on griddle or skillet. Yields 4 small pancakes which I am 6 months out almost and can only eat 1. So I'm eating a 1/2 an egg and 1/4 of a banana.

They keep well in fridge in a zip lock bag over night. If they last that long. Hubby eats the other 3 most days.

Sounds yummy! Thanks for sharing. I tried a recipe for banana "ice cream" that was on The Kitchen a few years ago, and it was really good. I should make it again. You blend a banana into a creamy consistency, and then let it freeze.

I really like pancake bites following the very simple recipe of a WLS blogger, The World According to Eggface. Trader Joe's has chocolate covered banana bites that are reasonably low calorie, low carb, and sometimes I'll pop one into the pancake bite cups to make them more indulgent.

OutsideMatchInside, Wow, you have done really well. I looked up the cream cheese pancake recipe and it looked great, but 300+ calories. I am getting sleaved next month, how many calories are you eating a day, now? Does it increase slowly? I have no idea. Thank you

Yes bananas are high in carbs the equivalent I'm eating is 1/4 a banana. About 6 grams. Much better than a reg pancake with Syrup to flavor, I don't even want to think about that carb content. I have hypoglycemia which is opposite of my pre op diabetes high blood sugar. So for me under 8g of healthy carbs in the morning is a good thing.

I make these but I do a 2 egg to one banana ratio and coconut flour for a little thickness. I make small medallion pancakes and freeze them so I just grab one here and there for a snack. Yummy! Thanks for sharing.

I logged back on here just to find the simple banana "pancake" recipe to try out tomorrow! :)

Since the thread is over a year old the OP might not see this, but if she does I'm curious as to whether she eats them plain or adds any butter or Syrup on top.

Bet she just does them a capella, that's how I ate crepes when I didn't have fresh grout to put on them.

Lol! I was just imagining grout on pancakes!

My husbands family has a story of grandma making “peanut butter” sandwiches with wood dough accidentally and that reminded me of that

I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

I changed my profile image to a molecule of protein. Why? Because I am certain that it saved my life.

That's brilliant! You've done amazing!! I should probably think about changing my profile picture at some point. Mine is the doll from Squid Games. Ironically the whole premise of the show is about dodging death. We've both done that...

Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?
