You could try pureed Chipotle!

puree some white Beans and carrots with a little bit of chicken stock, chili powder, cumin, and other Mexican seasonings as you feel you would like. Don't forget to salt and pepper to taste. Then put that in a container and layer mashed/ slightly pureed avocado and fat free sour creme. This tastes very similar to Chipotle. If you are looking for the textures of the rice and beans this won't help, but if you just want the taste sensation, then this will get you close. I have more if you are interested. Just let me know.
