I'm 16 days out. I made a mini microwave salmon quiche. I only ate about half of it but my husband, who usually hates salmon, loved it and finished it. It's 1 egg, 1oz lowfat cottage cheese. Warm up the cottage cheese and mix it well with the egg. Then salt, pepper and I stirred in canned salmon but you can put in anything you want. Mix it in a Cereal bowl and then microwave for about a minute and a half. If you want something sweet, just use the egg, cream cheese, a packet of splenda and a little cinnamon. REALLY yummy and super quick.

This is weird but hubby wanted chinese food today. So i went with him and had some food. But being i don't like Chinese food because the meats don't look like real meat from cows or chickens. So i ate veggies altho all were fried. I went to the buffet and got one fried green bean, one fried broccoli fried mushroom fried zucchini, a steamed mushroom, a small spoonful of fried rice ate a nibble of it. Got to my table and ate a bite off of each item i got ewww hated it all. Even had 2 boiled shrimp gross. Hubby was disappointed in me i think cuz i cant eat like he does anymore. He had 2 full plates of everything. Altho i did have 2 coconut macaroons they had they were good.

Had a great evening--went to very lovely restaurant with friends to Celebrate a birthday. The menu was great--but I just didn't want to deal with ordering a big entree and boxing it up so I asked if I could just get two or three scallops. Yes! They do that. They called it an add on and I got a lovely plate of three scallops with a sauce I could use if needed. I ate one and a half and gave the others to my friend. It was great! And I felt like a normal person. Not bad for five weeks post surgery!

more leftover burrito for dinner, but for lunch I had a hot dog. we were at the mall and there is this place that does hot dogs with all kings of toppings. I got a plain hot dog with shredded cheese and didn't eat the bun. not the greatest choice but the best I could do with what I had to choose from.

130 cal and 14g protein...don't beat yourself up :)

I got to know a man who owns a Chinese take out and asked him if he could teach me how to make the meat so tender. (Thinking I would learn it wasn't the meat that was advertised). What I learned is they use a method called velveting.

I had my surgery Dec and my NUT said 2 month out February I can eat salad on my BDay I went to Sizzler all u can eat salad bar! And had a salad shared w/ the hubby and Mom!! She did say baby steps test it out and see how u tolerate it! And only Oil or Balsamic oil!!

Date of Surgery 12/18/12

Wish I could I can't even hold down basic foods still , but I will try it soon bc there's a bunch of stuff she said I can't have but her list or suggestions don't stay down and my stomach is still swollen so I will ask soon bc I LOVE salads .....I can't wait :)

Yesterday I had a salad that had lots of raw cabbage in it, topped with turkey. I made it about 2 steps out my front door and to go running back in. I'm thinking the cabbage was a little too rough for my tummy... And boy did I pay!

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
