I was just thinking of this--I'm looking for a breakfast casserole recipe for Christmas morning

I'm doing roasted acorn or butternut squash. I put salt and pepper on it and roast it in the oven. Right before it is done I brush it with a little light butter and roast it a few more minutes. Really good and no sugar needed. The roasting brings out the flavors.
