Need Lunch Ideas

I have been coming home for lunch but my job changed and now I'm stuck at the office! I eat Breakfast there already because I'm in at 5:30am but now I need to find easy lunches too. Has to be mushies almost or I PB and I have access to only a microwave and a fridge.

I can only eat sooo many potatoes.. any other cheap and easy ideas for lunch? heh, I never knew how nice it was to grab a sandwich.

Kynekke - There is lots to choose from but, like anything else it all gets boring. Here are some of the things I have for lunches:

Cottage cheese

Soups

seafood salad

chicken salad

tuna salad

meatballs (either from subshop ordered without the roll or leftover)

meatloaf (left over from dinners)

Stouffers stuffed peppers (insides are really easy to eat)

omelet

rolled lunch meat with cheese

cheese and wheat crackers

Boston Market turkey with squash

those are my usuals. Oh and if you own a crockpot that will help you get more Proteins in that won't get stuck. I made chicken cacciatore in mine and had that for lunches last week. The chicken was super moist and shredded so it went down easy peasy.

Good luck!

Tuna salad works well for me. I can eat bread so I usually can eat a 1/2 of a sandwich in a 30 minute window. I eat 1/4 at a time. I love it.
