Recommended Posts

I am transitioning off soft foods and have been eating a lot of shredded chicken. Just chicken. And I was wondering if anybody had any suggestions of what to put the chicken with? Or any soft-ish food recipes? ? I can't handle eggs still for some reason, but the only thing I can think to put with the chicken is potatoes or something - which is a no go, too many carbs...

I always like buying a low carb dressing like balsalmic or italian and just letting the chicken marinate in the fridge overnight, and then baking it. It is always really juicy that way. I always eat italian dressing chicken thighs with things like green Beans or spinach.

My surgeon's office said we could use low - fat mayo or low - fat Miracle Whip to mix with it to moisten it up. Perhaps if you can tolerate carrots or something similar (non-starchy veggies), mix some in to make a "chicken salad".

I'm still on liquids post op, but we use a lot of this stuff called True Lemon on chicken/fish. I love lemon so yummy! Mix it with salsa? Light mayo? dressings. A1... go lookit the condiment aisle and let your mind get creative LOL ;)

I second the true lemon. It's just like squeezing lemon juice on. So refreshing during the summer. Just mix it with ANY type dressing.

Have you tried Frank's Red Hot sauce? Mmmm I just love the mild heat and tangy flavour it adds to the chicken. I bake it in the sauce and then have more on the side to dip my chicken into.

For a side dish have you cooked cauliflower and then pureed it into a pseudo mashed potatoe?

I had shredded chicken breast for dinner, I put a couple of teaspoons of guacamole on it and it made it moist and tasty, with a little taco sauce too. And I had 2 T of non-fat refried Beans with a sprinkle of cheddar cheese on top. This is one of my favorite dinners.

I love international foods...how about pairing chicken with some hummus next time, or some Palak Paneer from Trader Joe's. (If you're not familiar with PP, it is an Indian food: pureed spinach with chunks of cheese in it, it is a bit spicy, but that's the way I roll!)

1) Mix with Salsa and a little shredded low fat cheese.

2) Marinate chicken in soy sauce based marinade

3) Mix 3-4 oz chicken with 2 T. Dill relish and 2T lite mayo for chicken salad.

3) Get mustard (yellow or dijon) and add sweetener to make a honey mustard. Dip chicken cubes on toothpicks into honey mustard.

4) I have a lime chilli rub from Williams Sonoma that is tasty on chicken

5) Slice chicken very thin and cut into pieces about as big around as a cucumber. Make "sandwiches" using two thin slices of cucumber with a piece of chicken between them.

I would layer that shredded chicken with some fat free shredded cheese and refried (canned or home made) Beans, layer it up put in in the oven in a casserole take it out of the oven put some fat free greek youghurt and salsa (and perhaps some guack) and have a nice high Protein (and high fat so be careful, although avocado is good fat) mexican bake - mmmmm:)

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      April Surgery
      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

        I may have to have gall bladder surgery during my weight loss surgery. Not thrilled about it either but do not want 2 recovery times. Just want it over with.

        Thanks for your post. I may need to rethink my decision... :(
