Spicy Pineapple sauce for chicken breast.

I threw this together a few minutes ago and it came out pretty good and thought I would share. I made a couple of chicken breasts for daughter and myself and she likes her chicken w/BBQ sauce (she's 7) and of course I want more flavor and a sauce is a must to eat my chicken with. Chicken is a rare thing for me! So, I found a can of pineapple chunks in the fridge and thought...."what can I do with this?" I threw it in a pan with some cajun seasoning and lil extra chili powder for more of a kick, some pepper, salt, light golden brown sugar and some onion powder...might sound a little weird but I was just throwing it together!! I let it boil for awhile just to let the flavors come together and then I threw it in the food processor and at the end a handful of cilantro was put in and chopped with it. WOW! It was pretty good and spicy. I have no idea of a calories or fat amount but that it was spicy and sweet...a good combo. :hungry: Put over a grilled chicken breast and enjoy.!
