Savory Cinnamon Sweet Potatoes

4 medium potatoes (or 3 lrge) washed,sins left on

butter flavored non stick cooking spray

1 tsp salt

1/2 tsp fresh ground peper

1/4 tsp ground cinnamon

1 tsp ground chili powder

prehet oven to 375 degrees, cut potaotes into 1 in chunks and spread out in a sigle layer on a baking sheet, coat potatoes in cooking spray and sprinkle on half of the salt,peper,cinnamon and chili podwer, toss potatoes around and coat once again in cooking spray, sprinkle the rest of the salt pepper cinnamon and chili powder, bake for 25 minutes toss potatoes around baking sheet and bake for 20 more minutes potatoes shoud be fork tendered when they are finished

makes 8 servings 1/2 cup ea

cal 90,fat 0 g,carbs 21 g,Protein 2g

This is a quick recipe I did for my husband which turned out to be very good.

Aunt Jemima complete pancake

3 tablespoons of Peanut Butter (creamy)

Water

Instructions: Follow directions on the box for pancake mix, add Peanut Butter and Water. Add less water if you want the pancakes thick. Less water for thinner pancakes (This is what I do). Spray pan with Pam and pour pancakes to desired size.

(Peanut Butter=Protein)

Rosemary French Fries and Dip

Take one sweet potato and cut it into steak cut fries, marinate for a couple of hours in the fridge w/ about a tbs of extra virgin lite olive oil, minced garlic cloves (abt 3), cracked black pepper, sea salt, dried rosemary, dill and a tsp of lite balsamic vinegrette. bake at 450 for 10 mins, then flip and bake another 8-10 mins.

Dip

For the dip, I use 1/2 c ff sour cream, 1/2 ff plain yogurt and 2 tbsp of reduced fat olive oil mayo, mix well w/ fresh cilantro and the zest from a lemon, lime and orange. chill well and serve. Lo fat/lo cal...addictive

Personal pizza

-1 whole wheat pita

-2 Tbsp pizza sauce

-3 oz chicken (cut up into small pieces)

-1 Tbsp ranch (I like wishbone lite ranch)

-2 slices provolone cheese

-2 tsp hot sauce (if you want a kick)

-spread hot sauce on pita

-mix chicken and ranch (and hot sauce) in a bowl

-pour mixture onto pita

-cover with provolone cheese

-bake 12 min at 400

-broil on high until browning on top

Tuna Melt

-4 pieces whole wheat melba toast

-1 can chunk light tuna in Water (I like chicken of the sea)

-2 Tbsp ranch (same kind as above)

-2 slices american cheese (I like 2%)

-salt and pepper for taste

-drain tuna, then mix with ranch and S&P

-spoon even amounts onto pieces of melba toast

-fold each piece of cheese in half to make 4 pieces, then place on each mini melt

-heat in microwave for 30 seconds, or longer to melt more

Stuffed shells

-3 to 4 large Pasta shells

-6 Tbsp low fat cream cheese

-1 oz chicken cut up in pieces

-1 slice provolone cheese

-2 tbsp pizza sauce (or spaghetti sauce)

-cook Pasta shells

-put chicken, cream cheese, and provolone cheese in bowl, then heat for 1 min--mix up

-fill each shell with equal amounts of mixture

-spoon sauce over

Cordon bleu

-1 chicken breast

-1 slice swiss cheese

-1 slice ham (lunch meat works great)

-egg white wash

-1/4 cup bread crumbs

-pound chicken breast to 1/4 inch thickness

-layer cheese and ham on chicken

-roll up (place a toothpick to hold it)

-cover with egg white to moisten the chicken

-roll in bread crumbs

-bake at 375 for 30 min (or to internal temp of 175)

(red sauce on top is good, but not necessary)

I have never cooked fish before. Does anyone know of GOOD recipe for Talapia. That is the least fishy fish out there and I want to start eating fish, but don't want fishy taste. Thanks. Oh and is Chili ok to eat?

Hi Ruth,

I have a very simple, but great recipe for tilapia. Coat the fish with mustard. Dip in Panko (Japanese style) breadcrumbs, then saute in a skillet for about 2.5 min on each side. Enjoy!

Baked chicken Fajitas Recipe

This is easy and healthy.

35 min | 15 min prep

SERVES 6 , 12 fajitas

lb boneless skinless chicken breast, cut into thin strips

1 (15 ounce) can diced tomatoes with green chilies, drained

1 medium onion, cut into thin strips

1 medium green pepper, cut into thin strips

1 medium red pepper, cut into thin strips

2 tablespoons canola oil

2 teaspoons chili powder

2 teaspoons ground cumin

1/4 teaspoon salt

12 flour tortillas, warm

In a 13x9x2-inch baking dish coated with nonstick cooking spray, combine the chicken, tomatoes, onion and peppers.

Combine the oil, chili powder, cumin and salt. Drizzle over chicken mixture, toss to coat.

Bake, uncovered, at 400°F for 20-25 minutes or until chicken is no longer pink and vegetables are tender.

Spoon onto tortillas; fold in sides.

I really like this recipe.Cook your talipia in the micro or in a pan with a little olive oil or water.Put McCormicks Steak Seasoning on both sides.When finished cooking flake the fish and add salsa and green chili. May add a little cheese, fat free sour cream,avacado, etc.This recipes can be eaten cold or on salad or in a wrap .

I bake my tilapia in tinfoil @350 for 20-30 min, depending on the amount of fish. Before baking, I also season the fish with a tiny amount of butter, lemon juice, old bay, garlic powder and dill. yum.

How long have you been banded? Can you eat pancakes with no problem? I'd love to have some!

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!

      Having gall bladder surgery in a few days and I so hope the recovery is easier than the one from the modified DS! I could use a bit of luck/pep talk for a change. I'm starting to be able to walk around without experiencing dizziness, but it would be great if the random pain in my chest and abdomen would go away!!
