Low Fat, Low Carb, Veggie Lasagne Recipe?

Hi everyone,

I'm really enjoying everyone's recipes on this site..and the one's I have tried, turned out great! I'm having a family gathering next week, and wanted to offer a really good, healthy, lean, high Protein lasagne recipe to my guests. I've made lasagne in the past, but looking for something a little different that isn't too complicated..any suggestions?

Instead of hamburger in your sauce add diced in season veggies....zucchini, summer squash, green peppers, onions, mushrooms. Replace the noodles with thinly sliced eggplant and use ricotta instead of mozzarella.

I have a great lasgna receipe. Get low carb tortillias and use them from the noodles. I swear by this. get a pan, put sauce on the bottom then tortillas then whatever mix you wanna use and layer. There are recipes online. Just google low carb tortilla lasagna.
