Crock Pot is my friend

I was having trouble eating meat lately until I started experiementing with recipes for my crock pot. I usually put some kind of meat or poltry in it in the morning and then it is done by dinner. The meat is so lucious and it just falls apart. It is much easier to eat and goes down nicely. Plus you can even use leaner versions of meat and it still comes out oooh sooo tender. I know just about every has one and if not, they are relatively inexpensive. It's funny because I talk about it like it is a new invention but I guess I have just recenly "rediscovered" my crock pot because for the longest time it was a dust collector. I will post some sample recipes later but some ideas might be to cook cream Soups with chicken, Tomato sauce with beef, white wine with pork or any kind of seasonings you desire......oh by the way chicken stock or beef stock works well too......

My husband says I make the best pot roast on the planet in my crock. My secret is a product made by this company www.homemadegourmet.com it is grandma's sunday pot roast seasoning. It also makes great meatballs, onion dip and hamburgers. They have loads of yummy mixes and seasonings. It is a home party type company but you can also do single orders from a local distributor, they are based in texas but sell nationwide. I discovered them at a flea market in NC, I bought the coleslaw mix, we had a huge bbq to attend the afternoon that we got back to Chicago and I wanted something simple and fast to make, this was it. If you contact a local distributor they also have a crockpot minicookbook that is really good. I don't work for the company but I do love the products, I lived on the chicaken tortilla Soup during my liquid stage and then I added canned chicken breast during the mushie stage. ~Mandy

ok here goes, this is a recipe I just came up with one day because I was craving mexican food but didn't need all those carbs.....hope you enjoy

Mexican Meatballs

grocery list:

2lbs lean hamburger

one med. onion finely chopped

one small can of green chilies drained

one package taco seasoning

1 can of enchilada sauce

1 can of Tomato sauce

1 cup of shredded chedder or monteray jack cheese

In one bowl mix hamburger, onion,green chilies, and taco seasoning. Form hamburger mixture into medium sized balls and place into your crockpot. Then pour the enchilada sauce and tomato sauce over the meatballs. Cook on high for 4-5 hours or on low for 8 hours. Adjust cooking time according to the size of the meatballs. When they are done serve them alone or over rice and top with shredded cheese. You can also add black Beans and corn to the crock pot to make it a mexican stew.

I love to put a tri tip in the crock pot in , in the morning and come home an dinner is done. Tri tip i nthe crock pot is the best, it falls apart, makes great shredded beef tacos.

Love doing the corned beef and pot roast also. I have modified a few of my caserole recipes too to work i nthe crockpot. No fuss, no mess!

I need to start using mine again. I adore my crock in the fall and winter months the most I think.

My husband makes an out of this world crock pot chili and also "boiled dinner" as well.

I think I'll try the meatballs though. YUM!!!!

Amber- I am going to try the meatball receipe soon. Can you give me a comparison for the size of a med meatball. Like is it a golfball or egg size or bigger?

Kelly- Can you list the chili one please.

I am a horrible cook so please talk baby talk so I won't mess it up. Everyone says you can't -BUT trust me if there is a way I'll find it. I actually do have a crock pot- don't know how I got one but I have one-LOL LOL I think my X used it one or twice- he was more the cook. I appreciate any help at all.

Hubby gets home in a few hours from work and I'll ask him what he puts into it. He makes a hot one and a mild one both, so I can have him list both.

Ok I know this is old...but we have a good crock pot chicken that we love and thought I would share..

Baked chicken Breast w/ Mushroom sauce

16 oz skinned & boned uncooked chicken breast cut into 4 pcs (Now I always use 3 or 4 boneless & skinless chicken breast)

1 can of cream of chicken (I use the healty request kind)

2 tablespoons of non fat sour cream

1 cup (4oz can) sliced mushrooms, drained

1 teaspoon dried parsley flakes

spray container w/ butter flavored cooking spray. Place chicken in the crock pot. In a med bowl mix all remaining ingredents and evenly pour over chicken....

Cover and cook on low for 6 - 8 hours...when serving place some sauce over chicken for added flavor.

My sister was in town for the weekend, so I made DESSERT in my crock pot. I only had a small taste.

It was Hot Fudge Cake. You made two layers in the pot, took about 3 hours to cook. It made cake on the top, and a layer of gooey hot fudge on the bottom. Served it hot with ice cream.

It was awesome. Wish I could have had more than a spoonfull.

If anyone wants, I can post the recipe.

Big Paul, please DO NOT post that recipe!! I used to make a similar one called pudding cake & it was so good I would sit & eat the entire thing!! :);) Very yummy, delicious, dangerously out of control cake!!!!

On second thought....

I just saw that you lost yet ANOTHER 2 lbs. on the Weight Loss Challenge!! Why don't YOU go ahead & make that cake again for yourself. It just might give the rest of us a chance to catch up to you!!

You know we love you Paul!!!!! We're just EXTREMELY jealous!!!

I use my crockpot often, but I hate to clean it up afterwards:faint: . Much to my delight, I saw a commercial today for disposable crockpot liners....Woohooo! I think they were made by Reynolds, and looked a lot like the box that their roasting bags comes in. They even fit the large oval pots, which is what I have.

I have been using them for a couple of months now...LOVE THEM. They don't keep it completely clean on everything but oh my even at that the clean up is SO EASY...I wouldn't cook with out them ever again!!!! Get you some...

Big Paul...you keep that cake to your self and you go ahead and some and let us know how it is after you eat....I want to catch up to your 11 pounds.. :) You should tell us your secert so we can try and catch ya.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

        I may have to have gall bladder surgery during my weight loss surgery. Not thrilled about it either but do not want 2 recovery times. Just want it over with.

        Thanks for your post. I may need to rethink my decision... :(
