This is one of my fav weight watcers recipes

1 can pumpkin (NOT pumpkin pie filling just regular pumpkin)

1 package vanilla sugar free pudding (the powder do not add milk)

1 container sugar free cool whip

pumpkin pie spice to taste

Mix all ingredience together and put in the fridge until cold and eat, I am going to try and make this and add a scoop of vanilla Protein powder but i have not done this yet. I will try and let you know how it turns out.

It is kind of like a pumpkin fluf, or pudding. I tried it with the protein powder but If you add that you have to eat it right away it does not taste good the next day. So next time I am going to add the protein to each serving before I eat it.

I have become obsessed with squashes! Last night, I made a butternut squash recipe that rivals candied sweet potatoes:

1 butternut squash

1 TBS reduced calorie spread (I use Smart Balance)

1 TBS sugar free "maple" syrup

dash salt

Cut the squash in half, scoop out seeds and lay face down on sprayed cookie sheet and bake at 400 for about 45 minutes (until very soft and mushy.) Squeeze the cooked pulp out of the skin (or just peel away the skin) and mash with a fork. Add the rest of the ingredients, and put in a baking dish and back in the 400 degree oven for about 15 - 20 minutes until it looks a little brown/dry on top.

Love the pumkin/puddin one....great replacment for pumpkin pie, use the "free" cool whip and u are in thanksgiving heaven. Thanks for the great one.
