Vegetarians(or Vegans!)

What are your favorite meals? My dietitian is woefully underinformed about meat replacements, which I find surprising. I'm a vegetarian because I've found through elimination that it helps my autoimmune disorder, and also because I feel good about it!

Just looking for some quick, high Protein low carb, ideas.

If you don't have a problem with soy...tofu, very high Protein replacement that is versatile, my favorite is super firm. Otherwise hemp and pea powders for shakes. I'm no longer a strict vegetarian, I'm a flexitarian these days because it became too rigourous trying to stay in weightloss mode while eating (higher carb) replacements so I decided to continue my usual ovo lacto pescaterian diet and allow poultry when the occasion called for it (no other available foods)

I'm not a vegetarian but I do have some meatless ideas for you. I enjoy a lot of yogurt and cottage cheese. I find Oikos Triple Zero gives you the best high protein/high fiber/low sugar option. My favorite way to prepare cottage cheese is with toasted walnuts and a drizzle of honey. For meals I have a fiesta black bean quinoa salad that my husband and I just love. (I'll post a link for the recipe) I also like to make wraps with hummus and black Beans, spinach leaves and red pepper slices.

Egg salad would also be a good idea especially if you are still early in pureed/soft stages. So would lentil Soup.

I'm a pescatarian, but mostly eat vegetarian. Some of my veggie go-tos are (I eat far too much cheese, which may not work for you with the autoimmune - not sure):

greek yogurt

Quark (its a cheese that is yogurt consistency - but thinner than greek yogurt) I almost always have quark with frozen blueberries for Breakfast - by the time i get to work, the bb are still a little frozen, but not hard)

cottage cheese (there is one that is higher protein)

My favorite lunch is ricotta bake (google "Eggface ricotta bake") - I always add some sauteed spinach. I make a double batch and cook them in a mini loaf pan (makes 8 mini loaves) - freeze half of them.

beans/lentils (although not a lot of Protein here)

tofu - I either buy extra firm, drain it, and bake it or buy the baked tofu from places like trader joe's

eggs - mostly scrambled

Veggie sausage (I like morninstar farms)

egg salad (2 eggs, 1 TBL greek yog, 1 TBL may)

Veggie burgers (look at the protein content, some are low protein/high carb)

Snacks

almonds

Sargento nut snack packs

cheese

fairlife milk

Oh, I also like parm chips with either hummus or guac. CAn be a snack or a meal for me.

I don't know what kind of unholy magic they use to make them, but there little roughly quarter-sized chips made 100% out of baked Parmesan cheese. Really satisfies my crunch cravings.

It really is - a REALLY easy meal is 1 serving of parm chips with one of those single serving things of hummus or guac. I buy the hummus/guac at costco and freeze most of them - thaw 2-3 at a time.

What are your favorite Burger replacers? meat replacers in general? I usually use Morningstar chicken, and I fluctuate between burgers because I feel like every time I have a good one, I go and have a bad one from the exact same brand so I am ALWAYS changing up.

I really like Morninstar farms grillers prime (16g protein) and spicy black bean (9g protein). There is also a Chipotle Black bean burger at costco (16g Protein, but they're huge - i think morningstar farms) that is delicious.

I also really like the Morninstar farms hot & spicy sausage (9g protein)

Every now and again, I'll put some of the morninstar farms chorizo crumbles in with a scrambled egg and eat it with guac for a tortilla-less breakfast taco taste.

I also like boca burgers, but my grocery often doesnt have them

One of my Vegan friends tricked me into admitting those burgers were darn tasty, me who thought she was a Devout Carnivore! So I got more omniverous, haven't gone completely over to your side but we are meatless 4-5 days per week not even Tomkitten complains! Maybe I just hadn't given it a fighting chance before?

So Last night I made a vegan Olive Garden like Soup.

Diced potatoes boiled in veg base stock.

Then sautéd boca crumbles, kale, onions, peppers...added to the soup.

Thickened with corn starch, unsweetened almond milk, and chia seeds, seasoned with salt and pepper. This was super tasty!

I also add “Nooch” (nutritional yeast) to just about everything for extra Protein.

Vegan meatballs at Aldi’s are so good, we use them in so many meals. Also the plant based noodles at Aldi are super good. Edamame noodles, the hubby liked them, super high in Fiber, so carbs turn out being super low. Add that to some spaghetti sauce and another great vegan meal.

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?
