Food Before and After Photos

I guess by now you guys on here know some of my preferences.

Scrambled tofu with bacon, rye bread with Mett and red onions, Camembert on apricot jam. Plus one of my favorite coffee mugs pictured.

ETA: the "bacon" got good and crispy this time.

What is your scrambled tofu recipe/strategy? I have a lazy vegan child who really needs to start cooking more.

I made a fusion out of several recipes. I don't weigh or really measure anything to the t. Here is my personal keeper:

- tofu, one 200 g block (not too firm but not silken tofu, you might need to experiment with available brands)

- some red onion rings

Fry that in a bit of oil. Then add

- turmeric, about 1 tsp and a little bit of hot Water and stir until the tofu is yellow.

- white almond butter, about 1 tsp (I use the one with European almonds, it has a slightly less sweet taste)

- soy skyr, about 2 heaping tsp

Stir around again, then add

- nooch, lightly cover the whole mass in the pan and add a bit of hot water to make it creamy and stir some more

- add the magic dust last: kala namak to taste

ETA: I sometimes add mushrooms to this. With the nooch you might need to find your favorite as well. Nooch varies in taste - big time.

Interestingly enough my husband asked me for my recipe as well today 😂 (I'm going to teach him the recipe when he comes over next weekend).

first meal of day: biscuit, eggs, some of my homemade "moon cheese" (there was a thread about it yesterday and of course i had to make some!)

now, i don't know why i continue to make 2 eggs whenever i feel for egg's because 90% of the time i just end up eating one of them, but there you go.

426 calories, and all the cheese and 1/2 of the rest.

ha! got my mitts onto the halloween candy in the foyer waiting to doled out tonight!

chips, chocolate and some nuts (nuts from the pantry, not the halloween bucket lol)

418 calories, ate it all.

(can i say how much easier it is to eat chips and candy vs my lunch 🙄)

Went to Vegas for a few days, feeling lazy to get back into cooking and meal prep so eating "quick" things for the past 2 days. I hope I can snap out of it and keep learning to cook lol.

For Breakfast, I just had 36g of Catalina Crunch Cereal in chocolate banana flavor (110 cal, 6g fat, 14g carbs, 11g protein) with 1 cup of cashew milk (25 cal). It is one of my favorite quick ways to get some Protein in. I ate it all. Wish I had bananas to put in it. 20221101_133141.jpg

I encouraged my vegan child to cook today instead if only eating vegan convenience foods. She made the bruised kale salad (I made the Beans and sweet potato) She still ate the vegan chicken but I’ll count this as a win and hope for the best when college begins.

How this salad came out to 500 calories is insane! I’m blaming the quorn meatless nuggets (vegetarian not vegan as they have egg whites in them). Even so, I’m at 1300 calories for the day even with “ice cream” for dessert.

Tofu Shirataki tonkotsu noodle Soup (150 cal), 2 Chinese sausages (45 cal each, air fried first) and napa cabbage and Korean pepper to make it spicy. Soup helps me with hydration, and it's delicious and low calorie & filling. Here the kit, it comes with two servings. I always add things to it like an eggs, Proteins, veggies... Thursday’s chicken enchiladas (I ate half of one) and then I made bread that I forgot to tent so the tops got extra toasty. Turned a couple slices into toast with cashew butter. (Ate one slice). Friday the kids had Pasta salad and I packed pintos and rice for my work lunch.

      Question for anyone, how did you get your mind right before surgery? Like as far as eating better foods and just doing better in general? I'm having a really hard time with this. Any help is appreciated 🙏❤️

        I had about 6 months between deciding to do surgery and getting scheduled. I came across the book The Pound of Cure by Dr. Matthew Weiner, a bariatric surgeon in Arizona, and started to implement some of the changes he recommended (and lost 13 lbs in the process without ever feeling deprived). The book is very simple, and the focus is on whole, plant based foods, but within reason. It's not an all or nothing approach, or going vegan or something, but focuses on improvement and aiming for getting it right 80-90% of the time. His suggestions are divided into 12 sections that you can tackle over time, perhaps one per month for a year if a person is just trying to improve nutrition and build good habits. They range from things like cutting out artificial sweetener or eating more beans to eating a pound of vegetables per day. I found it really effective pre-surgery and it's an eating style I will be working to get back to as I am further out from surgery and have more capacity. Small changes you can sustain will do the most for building good habits for life.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.

      Losing my hair in clumps and still dealing with "stomach" issues from gallbladder removal surgery. On the positive side I'm doing better about meeting protein and water goals and taking my vitamins, so yay? 🤷‍♀️
