Tomorrow I am cleared to eat anything. What veggies did you eat first?

Tomorrow I will be 4 weeks out and can eat whatever I am able to. What were you eating at 4 weeks? Are there veggies that are easier to tolerate? When did you start eating lettuce? Raw veggies? When did you start tolerate quinoa and grains? My Dr is pretty sold on very low carbs and limited plant based proteins so they want patients to focus on animal proteins. How long did you take protein shakes? Sorry for so many questions. I really want to be plant based and am craving veggies. Thanks!!

I don't remember when I actually started more veggies, but it was early on. I was cleared for all foods about 3-4 weeks. Up until that time, my nut approved of my "green bombs" in protein shakes, which were ice cubes sized blended green veggies and fruits, that were blended in to my drinks. So technically, I had veggies from the get go. Didn't bother me at all. Now I do recall having salad early on, didn't bother me either.

I've learned the more you eat beans the better your tolerance. I eat them all the time and don't have issues with gas. Kind of the same but off topic, peanut tolerance...there was a study done that if you start your kids early on with peanuts during infancy (obviously a safe way to introduce it), those kids have built a tolerance of them. It's all very interesting actually.

I eat all kinds of beans and lentils and don't have problems. That is interesting about peanut butter.

Sauteed zucchini was the first veggie I tried. I sauteed it with a little olive oil and some light fresh herbs. It was delicious

I had sautéed zucchini noodles with spaghetti sauce. It was good.


Mashed sweet potatoes! I missed them so much. I couldn't add butter or brown sugar, but I did add cinnamon. They were delicious!....All 4 bites of them!

I made roasted sweet potatoes with black beans and chimichuri sauce- I didn't eat much but loved them. Mashed sweet potatoes sound great too!
