What's your favorite chicken salad recipe?

I used to eat this pretty regularly during my losing phase - chicken salad on a bed of lettuce or with sliced tomatoes. I had a great healthy recipe but can't find it. I have made it from memory - not likely remembering it all!

- chicken (cans from costco surprisingly good)

- Greek yogurt, plain

- diced apple

- curry powder which gives it a slight yellowish look but adds to flavor

Do you have a good and healthy version you like?

I don't think mine is as "healthy" as yours, but I like it:

Basic recipe:

* canned chicken breast in Water

* 2 tablespoons sweet pickle relish

* 2 tablespoons light mayo or light Miracle Whip

Additions (in any combination, if desired):

* chopped celery

* chopped pecans

* chopped apple

* chopped onion

* hard-boiled eggs

Please don't laugh and don't gag:

I put chicken quarters into a crock pot with bottle of diet root beer, some ginger, salt and freshly chopped basil, rosemary and thyme twig. and a few pepper flakes.

I let the crock do it's thing. I pull the chicken out, cool it and use it with whatever chicken salad recipe I can think of. I keep the recipe simple as the flavor of the chicken with the rootbeer/ginger is complex.

I really do not like chicken , so this gives me a different flavor profile to work with.

Worth a try. I promise!

Sort of the same thing as the first post:

canned or fresh chicken if I have it (but usually canned)

light mayo (usually olive oil version)

curry powder (love this in chicken salad!!)

red seedless grapes (cut into quarters)

green onions (2-3 depending on size)

1/2 stalk celery

Tastes best when refrigerated for a minimum of 2 hours to allow the flavors to meld.

Eat with raw red pepper strips - super good with it and has a lovely crunch so I don't miss crackers at all now.

Any chicken salad recipe you have can be greatly improved with fresh baked chicken breasts or a rotisserie chicken. The taste is completely different.

Replace the mayo with Walden Farms mayo few grapes, cut in 1/4s not in halves.

Wow some of these sound really good! I typically use rotisserie chicken, red grapes, red onion, dill pickle relish (too lazy to chop pickles myself), Ranch seasoning powder, light mayo and/or a little greek yogurt and chopped pecans. I try to put the Ranch seasoning on the chicken while it is still warm as it seems to absorb the flavoring a little that way. I sometimes add a little garlic salt if more seasoning needed.

Rotisserie chicken breasts and some of the juicy thigh meat

Celery hearts, the very center stalks and the light green leaves

Mustard seeds (pre-marinated in balsamic, pickle and pickled jalapeno juice)
Capers

Dash of Cayenne

Paprika

Dukes mayo or Kennsington Mayo

Drizzle Reduced Balsamic Vinegar

Red Onion

Drizzle Yellow Mustard
Sea Salt $ Black Pepper

Some of the Gelatin from bottom of Rotisserie chicken pan for added moisture and flavor

All of this is to taste, it's hard to follow a recipe here! And I know I am leaving something out, but I can't wait to have this again. I would have it over leafy greens, nothing else except maybe fresh squeezed lemon on the greens.

Not suitable for puree unless you puree it and that does not appeal to me anyway. Not sure it would be wet enough, so i would wait. I had this regularly during my first year post op but not till months down the road. Part of the reason was my portions were so small it wasn't worth making.

At 4 years out I can have a generous scoop on some lettuce. A batch lasts me about 3 days.

At what stage are you guys eating this salad? I'm in the puree food stage and wondering if I can eat this

Just wanted to say thanks to everyone! I added some relish to my recipe and it was good. I wonder if my recipe had half grapes instead of apple? I will try the grapes next time.

I like using good quality canned chicken for a few reasons

1. I am lazy

2. Rotisserie chicken is way salty for my taster

3. I have canned chicken and tuna as part of our emergency preparation kit but need to rotate stock so it's available.

I added a touch of red curry to my normal chicken salad. What a delicious, exciting little kick. I love the curry chicken salad at whole foods but it is full of sugar. This recipe will get me right through summer.

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
      Just for fun last week, I ran two 5Ks in two days, something I would have never done in the past! Next goal is a 10K before the end of this month.

      Hi everyone, I wrote back in May about having no strength. I still get totally exhausted just walking from room to room, it’s so bad I’m using a walker with wheels of all things. I had the gastric sleeve Jan. 24th. I’m doing exactly what the programs says, except protein shakes. I have different meats and protein bars daily, including vitamins daily. I do drink my fluids as well.  I go in for IV hydration 4 days a week and feel ok just til evening.  So far as of Jan 1st I’ve dropped 76 lbs. I just want to enjoy the weight lose. Any suggestions or has anyone else gone thru this??  Doctor says just increase calorie intake, still the same.
