easy healthy meals.

I go to my 6 week post op today. I hope it goes well. I feel like I am healing OK, but I need some food help. I did this to be a healthy weight and I knew on the front end this was NOT magic. I don't really Cook so what are some good grab and goes I can build my new life around? Help me.... BTW I have not seen any change in tastes that people have talked about so the really scary part is my veggie pallet was/is set to starch. I have not lost control but I am scared. I have to find things I can maintain for life EVEN if it is a cycle of 5 to 7 rotating dishes. I'm pretty good in the morning.... yogurt and a pack of Belvita crackers but I need easy goto lunch and dinner.< /p>

I suggest you go to the library and check out some cookbooks from different countries to find out what you like (my personal fave is Indian). You can make great veggie dishes and freeze them in ice cube trays, then into a large zip lock freezer bag. A little more work up front, but DEFINITELY worth it & take out what you'd like to eat at Breakfast time & it'll be easy to microwave in the afternoon or for dinner.

Not sure where you are but if you have a Trader Joe's near you, they have a case of prepared, refrigerated meats and meat meals - like fully cooked sirloin, BBQ pulled chicken breast, roasted turkey breast, lemon salmon - stuff like that. They also have similar things that are frozen. I rely on those a lot - I can just take 2-3 ounces and heat them up in the microwave. They also have great frozen veggies like broccoli florets, brussels sprouts, grilled asparagus, cauliflower & romanesco, grilled eggplant, and artichoke hearts, with minimal added sauces or butters. I use those - just take a small portion and either heat in the microwave or roast in the oven. Super simple, easy, and healthy.

Trader Joe's also has turkey bacon, turkey hot dogs, and really good fresh chicken sausage. Their canned sardines are great if you like that sort of thing (I do but I know they are not everyone's cup of tea). Scrambled, poached, or fried eggs, or an omelet made with some cheese and diced meat. I also like to use the little packets of flavored tuna (ranch tuna, sweet & spicy, etc.) and make a little tuna salad. You don't need to put it on bread or crackers or anything, just eat the salad with a fork! Another super easy meal.

Thanks a lot. I do have a Trader Joe's that I never go to. (I do Publix) but I will check out the grab and go meats. I saw my nut today and I plan to pick up some Atkins meals. I was NOT happy with my 6 week post op number. Only 11 pounds since week 2, that us 2.5 a week this was too drastic a measure for those pitiful numbers. I was really sad.....So now I am faced with my big test.... not giving up. I have to fight. I want to win. I've also slacked off this site too and it really helped me pre- op and initially post op and I see I still have support here. THANKS I live alone so I have no help. It's all me and damn it I can.

I learned about a new breakfast treat yesterday. Take a small container of greek yogurt with the fruit flavor of your choice. Add one packet of instant oatmeat meal stir then let sit over night. The oats absorb the liquid and it turns into a thick frosting consistancy. Was very suprised at how delicious it turned out. Fiber, Protein and only 160 calories. Very filling.

I tried one yucky Atkins (recommended here lol). Give me chicken or tuna salad any day. Refried Beans with taco sauce. Aidells Caramellized Onion Turkey Meatballs, yummy.

lunch today is curry chicken salad with craisins from the deli, but since it had more dressing that i'd use, I came home and dumped in more chicken strips, doubling the meat and halving the mayo affect. I chop it up a bit and spoon it onto lettuce leaves for an easy wrap. Today I added some chopped tomatoes too. CAREFUL though if you mix foods like this, as you need to be sure you'll be able to eat all of your Protein. I only do as many as I can eat containing my full 2 ounces of meat. Prepping more wraps than i can eat means i don' tknow if i ate enough Protein before the lettuce and tomatoes.

Tonight's dinner is crabcakes. I can't eat a whole one, so I buy two at the fish counter and reshape into three. Perfect!

      On day 4 of the 2 week liquid pre-op diet. Surgery scheduled for June 11th.
      Soooo I am coming to a realization
      of something and I'm not sure what to do about it. For years the only thing I've enjoyed is eating. We rarely do anything or go anywhere and if we do it always includes food. Family comes over? Big family dinner! Go camping? Food! Take a short ride or trip? Food! Holiday? Food! Go out of town for a Dr appointment? Food! When we go to a new town we don't look for any attractions, we look for restaurants we haven't been to. Heck, I look forward to getting off work because that means it's almost supper time. Now that I'm drinking these pre-op shakes for breakfast, lunch, and supper I have nothing to look forward to.  And once I have surgery on June 11th it'll be more of the same shakes. Even after pureed stage, soft food stage, and finally regular food stage, it's going to be a drastic change for the rest of my life. I'm giving up the one thing that really brings me joy. Eating. How do you cope with that? What do you do to fill that void? Wow. Now I'm sad.

        Life as a big person had limited my life to what I knew I could manage to do each day. That was eat. I hadn't anything else to look forward to. So my eating choices were the best I could dream up. I planned the cooking in managable lots in my head and filled my day with and around it.

        Now I have a whole new big, bigger, biggest, best days ever. I am out there with those skinny people doing stuff i could never have dreamt of. Food is now an after thought. It doesn't consume my day. I still enjoy the good home cooked food but I eat smaller portions. I leave food on my plate when I am full. I can no longer hear my mother's voice saying eat it all up, ther are starving children in Africa who would want that!

        I still cook for family feasts, I love cooking. I still do holidays but I have changed from the All inclusive drinking and eating everything everyday kind to Self catering accommodation. This gives me the choice of cooking or eating out as I choose. I rarely drink anymore as I usually travel alone now and I feel I need to keep aware of my surroundings.

        I don't know at what point my life expanded, was it when I lost 100 pounds? Was it when I left my walking stick at home ? Was it when I said yes to an outing instead of finding an excuse to stay home ? i look back at my last five years and wonder how loosing weight has made such a difference. Be ready to amaze yourself.

        BTW, the liquid diet sucks, one more day and you are over the worst. You can do it.

      Three months and four days ago... I was in Costa Rica having a life changing surgery! Yesterday we had a followup visit with Dr. Esmeral via video chat and this morning my middle number changed.  I'm down 47lbs and two pants sizes. I can wear a Large tshirt for the first time in like... 14 years! Woot!! Everything is going great. I have zero regrets. I went down to the riverwalk with a friend and walked 2 miles on Monday without even getting fatigued. And no more snoring or chugging pickle juice for crazy leg cramps! I need to go to the gym more... I'm making new shirts next week so that will motivate me. LOL But I'm also just not as TIRED all the time! I have a LONG way to go...but seeing the progress on the scales and in the mirror is a huge motivator!! Thank you all for cheering me on and supporting me!!
