Really having hard time fueling heavy workouts

I know I have to add more liquid calories because of the restriction I have.

My workouts are currently 2-a days:

MWF- weight lifting & swimming

TThF- running & biking

Sun- rest.

I'm training for triathlon as well as obstacle course races.

Today I crashed. I also didn't get enough sleep yesterday but that isn't the norm.

Suggestions on eating enough calories?

The more fatty meats would be an idea. What about fatty/oilier fish? Butters and cheeses? Those are protein sources that give healthy fats. Peanuts and other nuts too, but you need to look at the nut itself.
