Have you checked out the recipe sharing section of the forum? I love that section, I post ENTIRELY too many recipes in there :)

If it would nut be intrusive it might be cool to have a "guest" place for goodies like the wheat berries dish

If you would like the recipe I would be happy to post it....Takes only a few minutes prep and 30 min to cook the berries and it tastes heavenly...Eat a Protein along side it and you have a complete meal...

Wheat berry, Kale and Cranberry salad

10 min. prep / 40 min. total

1 cup dried wheat berries

1/2 cup dried cranberries

1/3 cup extra virgin olive oil

3 Tablespoons balsamic vinegar

1/2 teaspoon salt

5 cups chopped kale, about a 1/2 of a bunch

1/2 cup red onion diced

1 yellow or red pepper, diced

Method:

Rinse wheat berries. Combine with 8 cups Water in a medium pot. Bring to boil, then reduce heat to medium high. Cook covered for 30-35 minutes. Stir in cranberries during the last 2 minutes of cooking. Drain and rinse in cold Water.< /p>

Whisk oil with vinegar and salt in a large bowl. Season with fresh pepper. Stir in wheat berry mixture, kale, onions and red/yellow pepper. Serve immediately. Keeps well left over in the refrigerator for 1 day.

Serves 12. 143 calories. 3 grams Protein. 20 grams carbs. 7 grams fat. 3 grams Fiber. 110 mg sodium. Excellent source of Vitamin C.

Add cooked diced chicken, or chick peas or dare I say bacon...Doing so will give you a complete protein.....

Not strictly lunch.. It's dinner time now-chicken with roast veggies (mushroom, onion, fennel, cherry Tomato and green pepper) with garlic and herbs

Shoot. I meant to figure out how to put pictures up for this. I heated up refried black Beans with some cheese and meant to have some guacamole with that…but forgot the guac. Then the whole thing looked like a hot mess for all that it was delicious.

Our "nice" grocery store puts together meals every night, and one of the family's favorites is the enchilada one, that comes with the refried black Beans and rice. I went to the deli to find out if they ever sell it on its own, and fortunately they use it in their 7-layer dip and were willing to sell me a big container of it. I figure that by the time I get through this I won't want it for a while. It's perfect for this phase. And delicious.

Funny, I probably wouldn't have spent $10 or $11 on this a few weeks ago, but it's so easy to justify since it's easily 8 meals. I love this part of sleeving.

I actually have made tipping harder on myself since sleeving because I don't think it's the waiter's fault that my husband and I share an entree. So I invariably end up tipping as I would have if we'd had two meals. But then again, we had lunch for $4 a the food court for both of us so....:)

Hubby cleaned up lunch and left the leftovers on a plate so although my plate was much smaller, lunch!

If you consider eating Indian food normal that is :)

So if you're worrying you won't be able to eat or enjoy your food or be normal? Here's what I made for lunch today. Brown rice for the kids, ground beef curry, cucumber/tomato/Greek yogurt salad, palak paneer (spinach. with a homemade cheese). Apart from the rice, all good for us sleevers to eat.

I sometimes see people thinking they won't enjoy food, or that they can only have baked chicken and steamed vegetables. SO not true. I make Indian, Thai, Ethiopian, Greek etc all the time.

What is true however, is that my two kids (23 and 13) and my husband and I all ate--and we finished about a fourth of the food you see here :)

Feel free to post pics of what you're enjoying today that is sleeve friendly.

Here's my "I'm too lazy to cook tonight" dinner. Half an avocado with salt and pepper, and 2 oz cilantro lime shrimp from costco. So full and quite yummy.

      Oh yeah, something I wanted to rant about, a billing dispute that cropped up 3 months ago.
      Surgery was in August of 2023. A bill shows up for over $7,000 in January. WTF? I asks myself. I know that I jumped through all of the insurance hoops and verified this and triple checked that, as did the surgeon's office. All was set, and I paid all of the known costs before surgery.
      A looong story short, is that an assistant surgeon that was in the process of accepting money from my insurance company touched me while I was under anesthesia. That is what the bill was for. But hey, guess what? Some federal legislation was enacted last year to help patients out when they cannot consent to being touched by someone out of their insurance network. These types of bills fall under something called, "surprise billing," and you don't have to put up with it.

      I had to make a lot of phone calls to both the surgeon's office and the insurance company and explain my rights and what the maximum out of pocket costs were that I could be liable for. Also had to remind them that it isn't my place to be taking care of all of this and that I was going to escalate things if they could not play nice with one another.
      Quick ending is that I don't have to pay that $7,000+. Advocate, advocate, advocate for yourself no matter how long it takes and learn more about this law if you are ever hit with a surprise bill.

      Thank you everyone for your well wishes! I totally forgot I wrote an update here... I'm one week post op today. I gained 15 lbs in water weight overnight because they had to give me tons of fluids to bring my BP up after surgery! I stayed one night in the hospital. Everything has been fine except I seem to have picked up a bug while I was there and I've been running a low grade fever, coughing, and a sore throat. So I've been hydrating well and sleeping a ton. So far the Covid tests are negative.
      I haven't been able to advance my diet past purees. Everything I eat other than tofu makes me choke and feels like trying to swallow rocks. They warned me it would get worse before it gets better, so lets hope this is all normal. I have my follow up on Monday so we'll see. Living on shakes and soup again is not fun. I had enough of them the first time!! LOL

      Still purging all of the larger clothing. This morning, a shirt that I ADORED wearing ended up on top. Hard to let it go, but it was also hard to let go of those habits that also no longer serve my highest good. Onward and upward!
