I think I'll stick to zuchinni lasagne. My kid had fettucini Alfredo on Tuesday ..smelled good but not good for me.

I want to try chicken parmesan:

6 split breasts pounded thin

Crushed tomatoes 2 large cans

Red wine - 1/4 c

1 clove garlic crushed

1/2 onion....diced fine

2 tsp. Basil

1/2 t. Oregano

1 packet splenda ( optional)

Salt and fresh cracked pepper to taste

1 cup low fat shredded mozerella

1/4 cup parmesan

Combine tomatoes and herbs and wine and splenda... bring to boil... reduce and simmer for 1 hour

Lightly pan fry breast until just browned in a littleolive oil- you could bread these but why have the extra calories?

cover chicken with sauce in baking dishp with cheeses

Cover with aluminum foil and bake in 350 oven for 1/2 hour...remove foil and bake another 10 minutes

Baking time can be adjusted depending on thickness of breasts

Serve with Italian green Beans and Pasta for those who can eat it!

Ok so last night i made a chicken stir fry with carrots broccoli and cauliflower it was so yummy i ate 2oz chicken and about 2 oz vegetables ...the night before i made tacos with ground turkey and i ate 3 oz of taco meat with a little cheese and taco sauce on top and 1 oz cooked onions and peppers they were my first two non pureed meals woohoo!!!! My surgery was 4-16-13

pureed tuna with mayo alot pureed chicken ...i did turkey meatballs one night scrambled egg beaters

Baked chicken no skin, lettuce on a whole wheat mission wrap

(Chicken was so soft falling off the bone, took a wrap cut it in half and a little bit of lettuce, made a small chicken wrap)

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
