Endoscope was today and I'm not feeling to hot ATM So I will add something tomorrow coz today it's just about pick here there and sleep Because I still have a sinus infection and bronchitis.

Feel better Babysteps!

We are on a road trip so my dinner was 1/4 of a steak salad at Costa Vida. No rice, no tortilla, vinegrette dressing. Yummy!

Thy were good. I could only eat 2 slices but yum. I think the nutritionals might be off. I'm gonna refigure. It was worth a remake.

Tonight I had 3 one oz. slices fresh mozzarella with balsamic vinegar . Which is 15 g of Protein. Also had 2 skinny cow cheese wedges which are 2 g of protein on 3 crackers was great. Nothing stuck it all went down. Thank heaven !

Parmesan Zucchini Crisps

Nutrition Info

Calories: 170.2

Fat: 8.7g

Carbohydrates: 8.2g

Protein: 15.5g

Ingredients

1 medium fresh zucchini

1/4 cup egg beaters (can substitute egg whites)

1/4 cup grated parmesan

Directions

Pre-heat oven to 425.

Slice zucchini in round slices. Make slices thicker for more al dente and thinner for a softer' date=' more cooked texture.

Pour parmesan cheese into a zip lock baggie or freezer bag. Dip zucchini slices into egg beater and place in cheese bag. Close bag, shake until all pieces are coated and place on a non-stick baking sheet. Feel free to shake remaing bag mixture over zucchini.

Bake for 15 minutes or until cheese starts to melt and brown.

Tastes great with a marinara or ranch dipping sauce!

Baked tilapia with lemon, salt and Parmesan. It's my first try at this... But I am on soft foods and I can mush it with my fork. So there ya go.

I essentially did this but halved it. Used just cream of chicken and used extra chicken and the full 6 oz of velveeta.....I'm a cheesie kinda girl :)

      I've hit a stall 9 months out. I'm not worried, though. My fitness levels continue to improve and I have nearly accomplished my pre-surgery goal of learning to scuba dive! One dive left to complete to get my PADI card 🐠
      I was able to go for a 10K/6mile hike in the mountains two days ago just for the fun of it. In the before days, I might have attempted this, but it would have taken me 7 or 8 hours to complete and I would have been exhausted and in pain for the next two days. Taking my time with breaks for snacks and water, I was finished with my wee jaunt in only 4 hours 😎 and really got to enjoy photographing some insects, fungi, and turtles.
