Parmesan Zucchini- holy cow yum!

Found this on Pintrest- I used Italian romesco zucchini from my garden. I'm not a fan of zucchini usually but now zucchini won't be laying around on the vine until they're as big as baseball bats! Try dipping with spaghetti sauce or Bolthouse ranch yogurt dressing- so yummy, and easy!

Preheat oven to 400 F

One large zucchini

1/3 cup fresh shredded Parmesan cheese

Salt & pepper to taste

1 1/2 tsp Garlic powder- or for even more delish flavor, Johnny's Parmesan garlic powder

1 Tbsp Olive oil

Cut zucchini in half width wise, then slice into thick slices (like the type you would make if you you were making zucchini lasagna noodles)- about 1/3 to 1/2 inch wide and lay flat on a baking sheet with a silipat or lightly grease with baking spray. Brush zucchini with olive oil and sprinkle with salt, pepper and garlic powder. Top each zucchini slice with 1tbsp Parmesan cheese and slide in the oven. Bake for 15 min or until cheese is melted & browned, and zucchini is tender. Enjoy!

If you want the zucchini crisper, just bake it for less time. An awesome appetizer for family and you, great snack to get in veggies and Protein (2

G protein with 1 Tbsp cheese). If you're craving Italian, this will make your place smell like you've died and gone to Italia! Mangia!

      Well, tomorrow I go in for an impromptu hiatal hernia repair after ending up in the ER over the weekend because I couldn't get food down and water was moving at a trickle... I've been having these symptoms on and off for a few weeks but Sunday was the worst by far and came with chest pain and trouble breathing. The ER PA thinks it is just esophagitis and that the surgeon and radiologist are wrong. But the bariatric surgeon swears it is a hernia, possibly a sliding one based on my symptoms. So he fit me into his schedule this week to repair it! I hope he's right and this sorts it out. He's going to do a scope afterwards to be sure there is nothing wrong with the esophagus. Here's hoping it all goes well!!

      Having gall bladder surgery in a few days and I so hope the recovery is easier than the one from the modified DS! I could use a bit of luck/pep talk for a change. I'm starting to be able to walk around without experiencing dizziness, but it would be great if the random pain in my chest and abdomen would go away!!
