I like to have frozen fish on hand that is individually pkg. Like Costco sells. Salmon and talipia are good.

I just made sauteed brussel sprout with garlic. You chop up the brussels, and them talipia which I cook in my toaster oven with some lemon pepper and right before it was finished I put some pesto on top! Very yummy:)

I love to make a very simple turkey meatloaf. I use the Jenny-O and toss a little seasoned salt, chopped celery & a little bit of carrots and onion. It cooks very fast and can be used as several meals. It's much more moist than traditional meatloaf, and much healthier, too. If you have enough calories left in your day, you can top it off with a little gravy. I do that for my hubby, and he hates meatloaf, but loves the turkey meatloaf!
