Texas Caviar Recipe Lots Of Protein

Here is my Texas Caviar recipe that I love. It is full of Protein. It can be used with Lundberg's Rice chips (instead of tortilla chips and they taste awesome), or sometimes I just eat alone with a handful of little salad size shrimp or diced cooked chicken thrown in, or sometimes put a spoonful in a bell pepper cup or on a bed of lettuce. Very tasty.
Janet's Texas Caviar
1 14 oz. can whole kernel corn drained and rinsed
1 14 oz. can pinto Beans drained and rinsed
1 14 oz. can black beans drained and rinsed
1 14 oz. can black-eyed peas drained and rinsed
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
1/2 cup diced sweet onion
1/2 cup white or cider vinegar
3/4 cup canola or vegetable oil (not olive oil)
2 packets Splenda or sweetener of your choice
Salt and pepper to taste
Pour everything into a bowl and mix well. Refrigerate at least 8 hours. (best the next day). Stir periodically throughout the first day to mix liquid well.
