Let's talk barbque

I love barbque for many reasons, but the number reason is because I can get in close 40gr of Protein in 1 meal by eating super moist, tender barbque. I was tired of spending 7-10 bucks every time I wanted it, so I decided to make it at home.

I scoured for recipes, and settled on one that was super easy.

1 - 3 pound chuck roast (trim all the fat)

2 cups of favorite barbque sauce

1/4 cup of Worchestershire sauce

Garlic powder

Onion powder

Black pepper

Trim all fat from roast

Rub a generous amount of garlic powder, onion powder, and black pepper on exterior of roast.

Poke holes throughout meat with a big knife

Dump it in a crock pot (invest in crock pot liners by Reynolds for effortless clean up)

Mix barbque sauce and worchestershire together, and pour over roast.

Cook on low for 8-10hours.

Remove from crock pot, shred with a fork, dump all liquid from crock pot, put meat back in crock pot covered in your favorite sauce, and cook on low for another hour.

Not technical, not difficult, and you can control how many calories/sugar by choosing a lower sugar count barbque sauce. I don't watch my intake as closely as I was last year so I use Sweet Baby Ray's original sauce.

I actually set mine in the crock pot around 10pm, and remove it around 8am. So, I cook mine for about 12 hours, and it's super moist and tender. It's perfect for me, and I can eat about 6oz.

I've also made this with brisket, and it turned out exceptionally tasty. If you do not have a crock pot, you can get the same results by cooking low and slow in your oven. Wrap the meat(with spice rub only) tightly in heavy duty foil, cook at 350 for 1 hour, drain fat/liquid from foil. Unwrap, add barbque sauce, rewrap in foil loosely, decrease temperature to 225, and cook for 5-7 hours until meat shreds easily.

Even easier is to get your favorite cut of any kind of meat, throw it in a crockpot, cover with any kind of broth. Cook until it can pull apart with a fork then add BBQ Sauce. You can use shoulders, ribs meat, chicken, pork, rump, anything and it is delish!

Thanks for sharing! It's incredibly close to the recipe I've used for years, only I add a teeny bit of liquid smoke to mine. I grew up eating TX style BBQ, and I'm used to a little smoky flavor.

There are some really simple to make low-carb barbeque recipes online for those that are still trying to get to goal. I use one that calls for Tomato paste, diet soda and splenda as well as a variety of spices. It's not Sweet Baby Ray's but it's passable.

What's a good BBQ Sauce brand?

Here's one that's low carb that I used without the bacon.

  • 2 strips of thick bacon, chopped fine (or see note)
  • 1 small onion, minced
  • 1 clove garlic, minced or 1/4 teaspoon garlic powder
  • 1 small can (6 oz) Tomato paste
  • 1 can (12 oz) diet (sugar-free) cola - Splenda-sweetened preferred
  • 1/4 cup low carb (sugar-free) catsup, (or see note)
  • 3 T mustard
  • 1 Tablespoon Worcestershire sauce

I prefer Sweet Baby Rays or Kraft thick and spicy brown sugar or the thick and spicy original.

Wow, thanks so much for sharing. I have been DYING for some BBQ and don't think I can handle Rudy's yet. I will be making this on Tuesday this week. I'm so excited!!

I wonder if it would work without putting the sause on it? I LOVE brisket and pulled pork with spice rubs and I always order mine without sause (don't like BBQ sause)!

I take a pork tenderloin and put Adobo and Sazon and Garlic Salt on it and let it cook all day in the slow cooker and the shred it and put it on french bread and make grill!!! I love that meat I would totally just eat it by itself too!!!

      I have no clue where to upload this, so I'll put it here. This is pre-op vs the morning of my 6 month appointment! In office I weight 232, that's 88 lbs down since my highest weight, 75 lbs since my surgery weight! I can't believe this jacket fit... I am smaller now than the last time I was this size which the surgeon found really amusing. He's happy with where I am in my weight loss and estimates I'll be around 200 lbs by my 1 year anniversary! My lowest weight as an adult is 195, so that's pretty damn exciting to think I'll be near that at a year. Everything from there will be unknown territory!!

      Two years out. Lost 120 , regained 5 lbs. Recently has a bout of Norovirus, lost 7 pounds in two days. Now my stomach feels like it did right after my surgery. Sore, sensitive to even water.  Anyone out there have a similar experience?

      Am I the only struggling to get weight down. I started with weight of 297 and now im 280 but seem to not lose more weight. My nutrtionist told me not to worry about the pounds because I might still be losing inches. However, I do not really see much of a difference is this happen to any of you, if so any tips?

      Well recovering from gallbladder removal was a lot like recovering from the modified duodenal switch surgery, twice in 4 months yay 🥳😭. I'm having to battle cravings for everything i shouldn't have, on top of trying to figure out what happens after i eat something. Sigh, let me fast forward a couple of months when everyday isn't a constant battle and i can function like a normal person again! 😞

        I may have to have gall bladder surgery during my weight loss surgery. Not thrilled about it either but do not want 2 recovery times. Just want it over with.
