Is there a way to make a LEAN and Tender roast?

I know eye of round and rump roast are the leanest but I've never been able to cook one and get it tender. I've even tried them in the crockpot and they are still tough.

Do you guys know of a way to do it? We like chuck roast b/c they fall apart and are very tender if you cook on them on low in the crockpot but they are so fatty.

Any suggestions?

1) Do you have a pressure cooker? They break down the fibers in the meat better.

2) Cook the chuck roast in the crock pot the day before you want it, put the whole thing in the fridge to cool, remove the hardened fat from the surface and then reheat in the crock pot to serve. (Works best if your Crockpot has a removable pan)

Brown your roast first. Then if you cook very low and slow and put beef stock in the pan (and put a lid on the pan while cooking) I get very good results with tender beef. But you need to cook at about 275 for the first couple hours, then if you want a bit of browning take off the lid and take heat up to 325 for 30-45 minutes.
